Alright, along with all the new year's resolutions for being healthier....

What are your favorite fish recipes? I really want to eat more fish -- but the problem is, I don't really like fish that much. The recipe has to be really standout and kind of disguise the fishy taste for me to like it. My favorite fish is tilapia but I also regularly do salmon, shrimp and canned tuna/tuna steaks. I like all types of food. I feel like if I knew more recipes that I enjoyed to eat I would get bored less easily and eat fish more often, which I really need to do. Can you help?!


p.s. My favorite fish recipes are: "Fiesta Tilapia" (sort of Mexican-style), "Thai Shrimp Curry," "Honey and Soy Glazed Salmon" (sort of Teriyaka-style) and chunk tuna with pasta in a spicy marinara sauce or in a casserole (that actually tastes good, ha). I can print them in here if any of them interest you.

I love this recipe for seared ahi steaks - from Rachael Ray (I don't really like her show, but she has some good ideas).


2 ahi steaks 1/4 pound each


heat a grill pan on high until very hot.


Pat steak dry and drizzle with olive oil - then pepper and salt the olive oil side


Place in pan (oil side down) and sear about 2 minutes.


Turn heat to medium, flip the steaks and cook  (tented with foil) about 3 more minutes for medium rare.


A lot of this recipe depends on the thickness of the tuna steaks, so I'd treat the above as general guidelines.  It is really delicious - I like it pretty rare - but with some lemony butter noodles and steamed broccoli - plus it's pretty healthy.  I'm excited to see what other people post!

I love this recipe. In fact, i was going to post it today because i think it is so easy and good for you.  I customize it by adding Nicoise olives(any olive will do) and cloves of garlic left in their skins. Enjoy!!!


 










Salmon Baked in Foil
Recipe courtesy Giada De Laurentiis

Ingredients
4 (5 ounces each) salmon fillets
2 teaspoons olive oil plus 2 tablespoons
Salt and freshly ground black pepper
3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
2 chopped shallots
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme

Instructions
Preheat the oven to 400 degrees F.

Sprinkle salmon with 2 teaspoons olive oil, salt, and pepper. Stir the tomatoes, shallots, 2
tablespoons of oil, lemon juice, oregano, thyme, salt and pepper in a medium bowl to blend.


Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap the ends of the foil to form a spiral shape. Spoon the tomato mixture over the salmon. Fold the sides of the foil over the fish and tomato mixture, covering completely; seal the packets closed. Place the foil packet on a heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes. Using a large
metal spatula, transfer the foil packets to plates and serve.

Try tuna helper.  It is only 6 weight watcher points per serving which is really good if you aren't familar with WW.  I always add in a whole bag of frozen peas and carrots to mine to stretch it out to more servings and to add in some veggies.  Lately I've also been throwing in half a bag of corn.  I think when I put the veggies in I get a good 6-8 servings.  The saucyness of the box dinner takes way the fishy smell and taste.


I also made this from the Rachel Ray magazine and it was very good.


Parmesan- Crusted Tilapia


3/4 c freshly grated Parmesan cheese (I'm sure you can buy the pregrated stuff and be fine)
2 tsp paprika
1 Tbsp chopped flat leaf parsley (I used dried out of a jar)
4 tilapia fillets
1 lemon cut into wedges (I just used lemon juice)


Preheat oven to 400 degrees.  In a shallow dish, combine the cheese with the paprika and parsley and season with salt and pepper.  Drizzle the fish with olive oil and dredge in the cheese mixture.  Place on a foil-lined baking sheet and bake until the fish is opaque in the thickest part, 10-12 minutes.  Serve the fish with the lemon wedges.


It was only 2 or 3 ww points per piece of fish and very tasty.
