They're a weight watchers recipe believe it or not!


1 15-oz can of pumpkin


1 box of spice cake mix


1 small bag semi-sweet chocolate chips


Mix together.  Spoon into muffin tin.  Bake for the longest length of time recommended on the cake mix box for muffins.  Let cool completely and then remove from tin (they're very gooey and they'll break all over if they're not cool).


You could also subsitute raisins (plumped with some orange juice) and/or nuts, instead of the chocolate chips.


If you make small muffins (ie 24 muffins from a batch), they're 2 WW points each (95 calories and 2 grams of fat), and you might want to reduce the baking time by a minute or two.  I made larger muffins (12 from a batch), so they were 4 points, 200 cals, and 4 grams of fat.

Elle, I just read this recipe and it sounded so delicious that I went straight to the grocery store to get the ingredients.  The muffins are baking as I type

The muffins were delicious(I also had enough batter to make a small cake).  I think I put too much chocolate chips in mine though.  They were very sweet.  My dh hates pumpkin, so I need to be very disciplined and try not to eat all of the muffins at once.  Thanks again for such a simple, but delicious recipe!

I made these last night - delicous! But my muffins fell. They were nice and plump when I took them out of the oven, and then when I checked them later, they were all flat? Anyone know why this happened?

i made these and though it didnt sink in, they were VERY moist anddented al ittle at the top. The next batch I made, I omitted the oil since the pumpkin already makes the batter very moist.

The recipe doesn't actually call for oil at all - you literally dump the dry cake mix in with the pumkin and mix just those two things together, no need to actually 'make' the cake mix first.  HTH if some of you got so-so results!

Has anyones pumpkin been gritty?  The last 2 batches I've made with two different cans of pumkin, have had grit in them.  I complained to the company and they sent me coupons to get more cans of pumkin for free but I don't want to keep using it!  I was using Libby's brand.

Thanks Elle! I was 'making' the cake first and then adding in the pumpkin and choc chips. So do I not add the eggs or water as well?


needsfashionadvice, I used Libby's and mine wasn't girtty. Very odd! Is there another brand you could try?

Needsfashionadvice - Mine haven't ever turned out gritty before ... .  Have you tried using a different brand of cake mix, or mixing it for a couple extra minutes to make sure all the dry mix is incorporated?  Those are the only things I can think of ...?


Wetbandit - Nope, no eggs or water either.  Literally the contents of the mix box and the canned pumkin, and that's it .  The total lack of other ingredients is the best part, because I never seem to have enough eggs or oil or flour or whatever on hand when the desire to bake strikes me! I do personally like the dark chocolate chips in there too, but my SIL made a batch with golden raisins and cream cheese frosting and they turned out really good too!

I just made the Spice Cake muffins with chocolate chips AND the Devils Food muffins also with chocolate chips. I'm giving them to my friends and boyfriend as exam study snacks. Anyway, they're awesome! Easy, taste great and kinda healthy because apparently pumpkin is a good source of fiber. Thanks for the recipe.

I made them a lot last year without any grit at all too!  It was just these two cans of pumpkin in particular, maybe a bad batch? It was def. sand or something, no dry cake mix. I'm gonna try again though.
