Suggestions for a Girls' Night Dinner

DH is out of town next weekend...so I want to have some friends over for girls' night.  Any suggestions for fun drinks or tasty eats?

My girlfriends and I like to do "taco bar" every few months.  It's super easy.  We usually start w/ guac and tortilla chips.  Whoever is hosting cooks up some chicken strips and beans.  The rest of us split up who brings the other sides. 


It is really fun.  We all just hang out in the kitchen drinking Carona or margaritas and helping out where we can (cutting lettuce, tomatoes, etc.)

I have a super easy cooking light fajita recipe if you want it.  You could use it on your taco bar.


You cut the chicken up in strips and marinate in the fridge with chili powder, oregano, a dash of salt and a dash of sugar.


Put on broiler pan and broil for 5 to 6 minutes.


YUMMY.


also, this martini is good --- chambord, vanilla vodka and a splash of pineapple juice. served in sugared rimmed glass.


i have a good nine layer dip if you need that--let me know.

take sour cream (any type--reg,non fat or lite) and add a packet of taco seasoning mix. I usually add the chopped tomatoes and shredded cheese to this as well. Mix it up well.


Then just start layering your favorites.


You can spread refried beans in the bottom of the dish and then put the sour cream mix on top, i will put some chilis, or avocado slices over that. You can also put a layer of salsa and top it with shredded cheese and then top with black olives, avocado slices or jalepenos. Then refrigerate.


The taco seasoning mix makes it pretty yummy. And it is super easy and can be prepared the day before.
