My mom is an excellent cook. She can whip up something in a sec or just think of what to make by watching tv. I think everything on the food network looks difficult. I swear my BF & I eat out way too much. He's got a daughter that's 11. She eats with him half the time, her mother the other times...but that's not a good way to feed a kid. Obesity issues these days & all.


 


So, how do I cook for one or two? How does anyone come up with ideas. My rice turns out wet, I turn toast, and yes...it's that bad. Anyone recommend a good cookbook that's not hard. I can't even cook a pizza. I'm such a freak about meat, and can't stand if it's not thoroughly done. If I see pink in Chicken, I'll leave in the oven til I don't. Same with beef, see red & it's not done. Maybe I need to hire Britney Spear's dad..haha...if that was even monetarily possible from my standpoint...I probably would hire someone because I'm so horrible at cooking

I like Rachael Ray's recipes - she's got some simple ones and they all take less than 30 minutes to make.  Alton Brown is awesome - he has a show on food network called Good Eats.  He explains the science behind cooking and goes into detail with techniques, and I find it very easy to remember his stuff because it just makes so much damn sense!  He has a recipe for baked rice that is totally un-screwupable!


Once you get your basic cooking techniques down, you can make pretty much anything you want.  For the time being though, maybe some (fresh or frozen) stir fried veggies and some pre-cooked grilled chicken strips?

Pre-grilled chicken sounds good with veggies. Oh, if my bf wasn't a baby. He won't even eat broccoli. So annoying. The one dish i can cook..chicken broccoli casserole & he won't eat it. Oh my--

If my recipes say "serves 4" I just halve all the ingredients.  For simple stuff, I recommend this book to everyone.  It's called "A Flash in the Pan."  Everything can be made in one skillet.  Some of the recipes are complicated, but most of them are pretty easy and don't take a long time to make.
