Breakfast Pancakes LOADED with Protein

i found this recipe, and i thought i would share it.  jen would be proud because it features three of her five recommended foods in her article this month.  by the way, great article jen, i really look forward to your articles. 


here's the recipe, don't knock it till you try it. 


Oatmeal Cottage Cheese Pancakes:


Servings: about 3 small ones



  • 4 egg whites
  • 1 tsp vanilla
  • 1/2 cup of cottage cheese
  • 1/2 cup of oatmeal (oats, not cooked)

put all the items in the blender in the order that they appear.  blend.  pour into a heated pan (that's been sprayed).  heat until small bubbles appear on top, flip (it doesn't take long, maybe two minutes).


serve with sugar free syrup, berries or peanut butter.  they are super filling and LOADED with protein.  i ate one and froze the rest.

I love those pancakes!!


My recipe differs a little - mainly because I use liquid whites - so it was 1/3 c egg whites, 1/3c oatmeal (not cooked), and 1/3 c cottage cheese + vanilla and cinnamon.  I didn't blend them either, and it turned out all right.  I drizzled them with honey.

So how "oatmealy" are they? I love the idea of high protein & pancakes in general but I'm not sure about the oatmeal because I'm not a fan of the squishy oatmeal thing - but it's more of a texture issue when it's mixed than that I don't like the taste. If that makes sense. Maybe I should just try them, huh? What's the worst that can happen!

you just add the oats, not cooked oatmeal.  i think the texture is fine and surprisingly similar.  i decided to try it because i had all of the ingredients and frankly, i wanted pancakes.  the one thing i realized is, that i don't like sugar free syrup with them, so i do peanut butter and mixed berries. 


laken1- i am a skeptic when it comes to food.  i'd rather work off the extra calories at the gym than eat something that i hate, especially when there's so many healthy breakfast choices.  i would definitely try them.  i plan on keeping a bunch in the freezer for an easy breakfast option.

Oh...those sound great.  I love to have pancakes on the weekend, but I never do because of the cals.  I'm definitely going to try that recipe asap.

FH and tried these over the weekend and they are really good!  I made medium-ish size pancakes and the recipe made 5 for me, so next time I'd either make them a tad smaller than I did or make a double batch.


Erin - I wouldn't have know that there was cottage cheese in them at all.  If you use a good, not too watery/not too salty cottage cheese (I Knudson) you shouldn't be able to  taste it.

Elle- i'm glad you liked them.  i have made them three more times (just say no to the yucky flavor of sugar free syrup!)


erin- they definitely taste more like bread than dairy.  i think i just use the regular store brand cottage cheese, i just made sure to drain it. 


also, i made them for my bf (i didn't tell him what kind of pancakes they were) and i wrapped them around a turkey sausage link for him, he loved them!
