so, what would you prepare for breakfast, lunch and dinner if you had access to all of your appliances and kitchen table but no countertop, kitchen sink / garbage disposal, or dishwasher?

today's portion of my kitchen remodel was f***'d up so i have the disfunctional kitchen described above for at least another week. i'm trying to think of simple one-pot meals with little cleanup for an entire week. i'm sure we will eat out for lunch once or twice this week and maybe one dinner, but i don't want to depend on carry-out or restaurants.

i can make smoothies with frozen fruit, toast, scrambled eggs and cereal for breakfast. cans of soup, sandwiches and fruit + carrot sticks for lunch. for dinner i can steam vegetables & make rice (which is what i made tonight) but i'm not really inspired beyond that. i made whole wheat pasta with olive oil and fresh parmesan last night and that was fine, but sorta boring.

i'm going grocery shopping tomorrow morning. does anyone have any more simple ideas? any good recipes that come out of the microwave? i'm sort of a health / natural food person so i'm not really into frozen meals, but i'll consider any recommendations or ideas!

not sure how clean up would be but my bf makes rice and sasauge for me and I love it.  its pretty simple.  Get 1 packet of lipton rice (whatever variety you like - we do cheddar and broccoli) follow directions to prepare.  On stove cut up 1 lb of sasauge (precooked) and cook on stove until its browned (about 10-15 mins).  Mix sasauge into rice and serve.

i would use the crock pot as much as possible.  all you have to do is throw in the ingredients, veggies, meat, etc... and you're set.  the next day i would just pull out some buns and eat the leftovers on a bun. 


aurora's post got me thinking....what about boiling some chicken sausage or lower fat hot dogs?  you wouldn't need much water. 


rice is easy to cook in the microwave. 


this is one of my favorites...



  • brown rice 
  • lettuce (you can use the pre-packaged kind)
  • those chicken strips that are made for salads (precooked...i like southwestern the best)
  • ceasar dressing (i use low fat)
  • ww tortilla
  • and cheese if you want (i like asiago).

all you need to do is cook the rice in the microwave, add chicken to a tortilla, cook it for 1 minute, add lettuce, and dressing and the rice (cheese if you want).  it's an easy and healthy meal to make in the microwave.  it's a really good wrap. 


you can make a large batch of rice and add canned black beans, cheese,  canned corn, and salsa the next night for a cheesy southwestern dish.  you can add chicken or not and put it in a tortilla if you want.  


i hope you're not displaced for too much longer!

How about some fish and veggies cooked in foil in the oven? No cleanup because you get to throw away the foil.


Also you could try Amy's frozen dinners. I think they have some family-sized meals, if I'm not mistaken. I'm personally a big fan of the Amy's burritos. (Amy's is all organic, if you weren't aware.)
