I didn't have time for breakfast so my eating is off center today already
S: Apple jack knock off cereal - 3 pts

As little as possible since tonight is weigh in. And since I read that article about how much the food weighs before you digest it I just can't bring myself to eat much on Tuesdays.
Lots of water.

I'm not doing half bad, suprisingly - down another lb .

B:  Breakfast burrito (egg whites, soy sausage, reduced fat cheese), coffee, banana

S:  2 oatmeal raisin cookies, mango

L:  Homemade vegetable barley soup, carrots

S:  Tea, 2 oatmeal raisin cookies, apple

D:  Honey lime tilapia, warm spinach/black bean/corn salad

E:  Today is my off day, and I'm still plenty sore from yesterday!  I modified the HIIT workout even further, since the original wasn't too friendly to my arthritic knees.  It's much more manageable now and I feel like it's something I can really stick with.

My even more modified version, for other decrepit old people like myself:

2 min - Walk @ 3 mph

4 min - Walk @ 3.5 mph

4 min - Walk @ 4 mph

10 min - Run @ 6 mph for 30 sec, rest 30 sec, repeat

4 min - Walk @ 4 mph

4 min - Walk @ 3.5 mph

2 min - Walk @ 3 mph

1.  The sausage is by Lightlife Gimme Lean! - we get ours in the produce section by the organic veggies.  It comes in a 1 lb tube.  It's by far my favorite brand.  Such a believable texture it's amazing.

2.  Juice from one lime, a tablespoon of honey, little salt and pepper, and some chili powder - turn it over in that a couple times and cook it on medium heat for 3 minutes each side in a tad bit of olive oil and a tiny pat of butter.

3.  It's a Rachel Ray recipe and it is to die for!  Makes 4 big servings.

Warm Black Bean and Corn Salad

Olive Oil

1 onion, chopped

2 garlic cloves, chopped

3/4 teaspoon crushed red pepper flakes

1 teaspoon ground cumin

Salt and pepper

1 lime

1 teaspoon chili powder

1 bell pepper, seeded and chopped

1 10-oz box of frozen corn, defrosted

1/2 cup chicken broth

1 can black beans, drained

handful of chopped cilantro

1 bag of baby spinach

Preheat a skillet over medium heat w/ 2Tablespoons Olive oil.  Add onion, garlic, red pepper flakes, cumin, salt, pepper, and chile powder.  Cook stirring occasionally for 3 minutes.  Add the bell pepper and corn and cook for another minute.  Add chicken broth and cook for another 2 minutes.  Add black beans and cook until beans are just heated through.  Remove skillet from heat and add the lime juice and cilantro.  Put the spinach in a large bowl, and poor the warm mixture over the spinach.  Toss to wilt the spinach and adjust seasoning if needed.

B:  Kashi Go Lean w/ Blueberries and honey

S:  Black tea, Captains Wafers

L:  Leftover piece of pizza w/ canned salmon, ricotta, and mozerella (sounds weird, but it was so good)

S:  Yogurt, applesauce

D:  Stir fried chicken with pineapple, snow peas, bell pepper, garlic, ginger, basil, soy sauce and honey over soba noodles

E: None.  I'm wiped out.

Pan fry - adds a little more fat then baking does, but it's so low fat to begin with and so is the salad, I think it's worth it!  I've never tried baking it before - how does it turn out?

not to completely hijack the thread...

I broil it in the oven for a few minutes on each side and use blackening seasoning and spray butter.  It is very delicious.  Served with steamed broccoli.
