Citrus garlic pork loin

I made this last night & it was REALLY good. It has that tangy sweet flavor - yum. I ate some more from breakfast. I did use pork tenderloin, like the 2 pound 2 pack that is about $10 because I'm really clueless as to what "lean" pork looks like & I'm fairly sure the tenderloin is lean.

3 garlic cloves
1/2 cup lime juice
1/2 cup grapefruit juice (not cocktail)
1/2 cup soy sauce
1/2 tsp hot sauce
1 lb. center loin pork, lean only (again, i used 2 lbs pork tenderloin)


Mince garlic & mix with lime, grapefruit, soy sauce & pepper sauce. Let sit at least 1 hour.

Turn tenderloin in marinade & coat evenly. Cover & refrigerate at leas 1 1/2 hours, less than 5. Turn occassionally. (outside may lighten in color).

Drain pork & reserve juices. Roast pork 10 minutes @ 450, reduce heat to 325 & cook until 145-150 degrees inside. (It took about an hour or so on 325).

Boil marinade 3 minutes, reduce heat & simmer 10 more minutes. Serve sliced with marinade on top.

4-5 pts / serving - a serving is 3 oz pork, 2 tbsp sauce.

I served it with steamed artichokes. Let me know if you make it & tell me what you think.

oooh, that sounds really good.  i love grapefruit juice!  and lime juice and hot sauce...i'll definitely have to try this.  thanks!

This recipe sounds really good! I'll definitely be trying it out.

My only concern is reusing the sauce after the raw meat was sitting in it. I thought you weren't supposed to reuse it?

You boil it for 3 min so there should be a problem when you dont cook it thats when I'd be worried.

laken where did you find the grapefruit juice?  I found everything else i needed at kroger on sunday but wasn't sure about grapefruit juice.  Is it on the apple juice aisle or did you use concentrate.  Also about the hot sauce.  Tabasco ok or no?

The only kind i could find that wasn't "cocktail" was on the apple juice aisle but it was at the very bottom & in a great big can. I would think tabasco is fine.

do you think you could substitute some other citrus juice (like lemon?) so that it wouldn't be necessary to buy a big thing or do you think it has to be grapefruit?

I think it would still be good without it. I used less because seriously if my DH knew I put it in there he would have said it was gross. So i used more lime & soy & less grapefruit. I would think lemon would be ok too.

On a side note, Martha Stewart is doing cooking school on her show & she talked about the marninade issue. She said not to use the marinade unless you cook it - that it's ok after cooking. Just FYI.

Laken I made this tonight and it was great!!! I was a little hesitant because it only took 20 minutes to cook in the oven but it was cooked.  And the sauce reminded me of A1 Steak Sauce which I miss since I quit eating beef.  I am defintely cooking this again.


Hermoine - I had to buy a large bottle of grapefruit juice too but I'm going to measure out how much I need in a measure cup again and then freeze them into ice cubes so I don't waste the juice and have to buy it again.  Once I know how many cubes = 1/2 cup I'll be able to pull those out of the ziploc and just defrost them.
