Layered Ground Turkey Enchiladas

I saw this recipe on the weight watchers forum (originally from cooking light)--ppl were raving about it.  I think I'll make it this weekend:


Layered Ground Turkey Enchiladas

Serving Size : 8
Categories : Casseroles

10 oz Old El Paso Green Chilli Enchilada Sauce
10 3/4 oz Campbell's (U.S.) 98% Fat-Free Cream Of Chicken Soup
8 oz Kraft 2% Milk Reduced Fat Natural Shredded Cheese Shredded Sharp Cheddar Cheese
14 oz reduced-fat sour cream
20 small corn tortilla
16 oz uncooked ground turkey breast

Tear tortillas into pieces. Put one layer on bottom of 2 quart casserole dish.

Mix sour cream,6 ounces of cheese,soup, enchilada sauce and chicken in a bowl. put one third of mixter on top of tortillas.

Repeat layers 2 more times ending with chicken mixture. top with rest of cheese and bake at 350° for 30 minutes.

Ooh I missed this recipe posting the first time around.  How did it turn out?  Can you use flour tortillas instead of corn?  Just curious.  Also do you think it would be weird without the sour cream?

Hey aurora--I forgot to report back about this.  it was pretty good and so easy.  next time I'll season the ground turkey a little more though.  It was a tiny bit bland, but we finished it off very quickly (like in 2 days).


I am sure you can substitute flour tortillas.  It's a WW recipe iirc and the corn tortillas were used to keep the pts lower.  if you do use flour tortillas, be sure and spray the bottom of the pan really well so they don't stick.  About the sour cream, if you leave it out i would substitute something else or it will be too dry, b/c it does use quite a bit of it.  you can substitue another can or two of soup or maybe even cottage cheese.  hth let me know what you think or if you decide to make it.

thanks for responding alb.  I only ask about the corn vs. flour because my boyfriend claims to hate corn but he'd never know if I made it what was in it.  I wonder if cream cheese might work instead of the sour cream.  I know you can sub something for it but I never remember.  I might just have to play around with it.  Does it keep the sour cream taste when you mix it all together?  I try to like the stuff but I just can't learn to like it haha.

ALB--
i made some turkey white chili the other night out of Martha Stewart cooking mag. It was excellent and we don't like ground turkey much but I think the key was a jalapeno pepper sliced with the seeds removed and browned with the turkey. I also added some onion and garlic. It made the turkey taste so much better. I was skeptical that it would be too hot when I read the recipe so I just used half a jap pepper.
Try it and see what you think.
and let me know if you want the recipe cause it rocked and hubby thought it was ground meat not turkey.
