what are good ways to cook tofu? I have fried it before, but it's just so unhealthy and took forever. Also, any good recipes?

Thanks!

You can blend it into homemande soup (ie: cream of broccoli) insted of cream. Most people don't even notice the difference.

here's something my boyfriend and i eat at least once a week...throw some veggies (soybeans, spinach), maybe some chicken in a pan with a little oil. mix peanut butter, some red chili pepper, some mirin (japanese rice wine), salt, pepper, soy sauce up in a little bowl and throw that on top. maybe some chicken broth if the sauce is too thick. then just throw the tofu (cut into little cubes) on top and saute until it's all heated through. i looooove tofu so i use the whole block and eat it all over brown rice.

super easy and if you like peanut sauce, it's more interesting than just a plain stir-fry...

This is my favorite tofu recipe. I highly recommend it. It is really easy once you have all of the ingredients. I also recommend doubling the recipe and serving it over soba noodles. I put the tofu together with the marinade the night before. Also, i include onions, carrots and broccoli in the marinade.  Make sure that you try and get all of the liquid out of the tofu before you marinade it.

Baked Tofu Szechuan Style

Recipe Courtesy of Jeanne Lemlin

Recipe Summary
Prep Time: 30 minutes
Yield: 3 servings

The marinade:
2 tablespoons tamari soy sauce
1 tablespoon Oriental sesame oil
1 tablespoon vegetable oil
1/2 teaspoon minced fresh ginger
1 pound extrafirm tofu, cut into 3/4inch cubes and patted very dry

The sauce:
1/2 teaspoon chili paste with garlic*
1 tablespoon naturalstyle peanut butter or tahini
2 tablespoons dry sherry, rice wine, or vermouth

* Chili paste with garlic can be purchased in oriental food shops, supermarkets, and many specialty food shops.

In a medium size bowl combine the marinade ingredients. Gently stir in the tofu and coat well. Let marinate for 30 minutes, or up to 8 hours. Cover and chill if longer than 30 minutes.

Preheat the oven to 450 degrees. Pour the tofu and its marinade into a shallow baking dish in one layer. Bake for 15 minutes, tossing once with a spatula.

Combine the sauce ingredients and pour over the tofu. Toss to coat evenly. Return to the oven and bake 10 more minutes, or until golden brown. Let sit 10 minutes before serving; it should be served warm, not piping hot.

I like to heat up 1/2 a jar of tomato sauce, a can of diced tomatoes, and a block of extra-firm tofu. I cut the tofu into squares and let it heat up in the sauce -- yum! and fast too.

have you tried marinating the tofu and then using as a meat substitute on a hoagie/sub?

this little store down the street from me sells the best tofu hoagies. all that they are:

marinated tofu chunks (it tastes sorta like soy sauce marinade, but you could probably do this with any sauce or marinade).

cilantro and jalepeno peppers.

shredded carrots.

and that's it. yummy yummy.

for christmas my crazy aunt and uncle gave my vegetarian boyfriend a giant meat injector, complete with like a 3" needle!! Since he doesn't eat meat, we were going to try to "inject" some tofu with soy sauce to see if it would help with the flavor. When we eventually get around to trying it, I'll let you know how it goes :)
