Anyone had this before? I made this last night (I did a lot of cooking yesterday since I had the day off and I already cleaned over the weekend - damn ice).


It was super easy to make and super yummy. It's only 4 points per serving and it took about 10 minutes to make. I left the recipe at home but I'll go get it at lunch and post it if anyone wants it.

I went home and got it at lunch so here it is:


Ingredients:



  • Half of a 12-ounce can frozen orange-strawberry-banana juice concentrate, thawed (I used strawberry and banana and oops! I used the whole can, not half. Just realized that.)

  • One unce package fat-free cream cheese

  • 1 package (four 1/2-cup servings) sugar-free instant vanilla pudding mix

  • 1 1/2 cups light whipped topping

  • 1 cup strawberries, chopped (I used frozen.)

  • One reduced-fat graham cracker pie crust

Preparation:



  1. In blender or food processor (I used hand mixer), combine juice concentrate, cream cheese, and pudding mix; process until smooth (mine still had lumps).

  2. Transfer to large bowl; fold in whipped topping and strawberries

  3. Transfer to pie crust; spread evely. Cover and refrigerate until firm, at least 2 hours

Per serving: 203 calories, 7 g fat, 1 g fiber, 4 points per serving, makes 8 servings
