Easy, healthy pasta tuna recipe

I know everyone is always looking for easy, healthy recipes and I made this last night and it was soooo good and soooo easy. Plus the ingredients are things you would likely already have. This is my own modified version of an actual recipe I found in a magazine called body & soul.


Pasta and Tuna with Spicy Balsamic Sauce


Makes 2 servings:


whole wheat pasta


2 tablespoons olive oil


3 tablespoons balsamic vinegar


2 tablespoons Dijon mustard


1 tablespoon sugar (I used a pack of Splenda)


1 teaspoon red-pepper flakes (optional)


1/2 bag fresh baby spinach


1. In large pot of salted water, cook pasta according to package.


2. In a separate bowl whisk together vinegar and mustard and once it's completely mixed slowly add oil, sugar and red pepper flakes. (this is basically balsamic vinaigrette dressing)


3. Wash spinach and drain leaving the spinach in the colander, then when pasta is cooked pour the pasta (and hot water) over the spinach. Drain.


4. Add the pasta and wilted spinach to the vinegar sauce, mix and top with canned tuna (and I added a little fresh parm).


Per serving: 250 calories, 35 g protein; 15 g fat; 50 g carbs; 5 g fiber.

sounds yummy.  i eat tuna a lot, and have a hard time not being super bored with it.

Awesome!  Tuna is a staple in my diet.  I can't wait to try it.  I'll let you know what I think of it.

I just want to let you know I tried your recipe the other night.  I made too much pasta, and I'm not a big fan of balsamic (I will use red wine vinegar next time), but I really like the recipe.  It's a great base recipe to play with.  I really like how you "cook" the spinache in the hot water from the pasta.  That was an awesome idea I will use often; usually I don't like spinache, but I really liked it in this dish.

So glad you liked it. I agree it's a good "base" recipe. It's not exceptional but it's so easy and you can vary it really easily. I made the dressing and spinach and put it over ravioli instead of plain pasta and that was really good too.
