I'm pretty much the cupcake queen.  I just love them and can't get enough.  Anyway, for our next yearbook deadline party I want to bring in chocolate cupcakes with peanut butter icing.  Anyone have a good recipe for peanut butter icing?  Or does it even exist?

I checked the Magnolia cookbook and they don't have one but Epicurious has this recipe for brownie cupcakes with peanut butter icing. It looks like most people gave it good reviews.

Hey nicoley, just wanted to let you know I used that recipe cc posted.  I substituted the whipping cream for 1/2 and 1/2 because that was all we had and it still turned out fine.  The icing is soooooooo good!  My sister and I just split one and it was delicious.  I don't know if I can wait til tomorrow to eat the rest !

Thanks for letting me know how the cupcakes went... i think im definitely going to have to try them!  Were they easy to make and how time consuming/messy was the process?


Also, you say you are the cupcake queen :) So i was just curious what some of your fav cupcake recipes are? I love cupcakes and making them so would be interested in getting some new recipes to try.

I used a mix for the actual cupcakes (I think it was that Moist chocolate kind) but the icing was incredibly easy to make.  You just dump all the stuff in the bowl and mix it adding in the whipping cream (or in my case, 1/2 and 1/2).  The consistency was perfect and they were a huge hit.  Usually I'm lazy and just make Funfetti cupcakes.  If you haven't heard of them, it's white cake mix with sprinkles that bake inside and vanilla icing with sprinkles included (less stuff to buy!).  Those always turn out great and take almost no effort.  I've also made some carrot cake cupcakes (I think it might have been hotcocoa who posted it) and they were really yummy too.  The recipe is probably a few pages back.  I'll try to find it for you.


ETA: Hmm, I just found the post and she didn't post a recipe so I'm thinking I just was inspired and looked up a random internet recipe.  Sorry .  I'll let you know if I try any recipes in the future!
