I booked a room at a B&B as a little "mini vacation" for my bf and I. The only thing is that he gets off work late at night, and I would like to have some kind of meal prepared or ordered for him. However, there is no microwave or kitchen, so I would have to have food/snacks that are ok to eat cold. I was thinking maybe a picnic style dinner? Except I dont know what kinf of items to include in it. What do you think? Help! Thanks in advance
i don't have any of my own ideas and i don't know how much time you have or how fancy you want to get, but i just picked up the "everyday with rachael ray" magazine the other day and there is a feature that includes 6 or so recipes that require no cooking whatsoever. they are "little bites" type recipes but some of them look really good. i'll list them (since i have my mag right here) and if you want any of the recipes, let me know.
Tortilla Chips with Black Beans, Corn and Spicy Cilantro Cream
Cucumber Rounds with Beet Cream and Smoked Salmon
Minty Shrimp Rolls (i guess you'd have to find pre-cooked shrimp for this one)
You could get a good loaf of bread and make nice sandwiches. And maybe a salad or a cheese platter with 2-3 kinds of cheese, apples or grapes, olives, nuts. I guess certain kinds of pasta - like pasta salad - would be good too but I don't really like pasta salad so I have no good recipes.
thanks for all of the suggestions! i have decided to make a salami, tomato, and mozarella salad and smoked salmon, cucumber and cream cheese dill sandwiches. mmmm!! cant wait!!!
I have a great recipe for marinated mushrooms that I make all the time & they are a hit everywhere I go. I did them for a similar weekend once with wine & cheese & it made a nice addition . your menu sounds great though, just thought i'd add the suggestion.

I was thinking along the lines of this too, but more as an antipasto dinner.
Salami, tomato, mozarella, olives, artichoke hearts, pesto, bruscetta topping, nice crusty bread, and a bottle of wine would be an awesome meal. My husband and I will have this for dinner every now and then and it's great.
