Since I will be home without the hubby tonite, I want to have something fun for dinner, but not quite sure what. I thought if everyone listed what they plan to have for dinner tonite I'd get inspired.
I think I might make shrimp tacos or something. I'm craving shrimp right now.
I'll probably cook up some frozen shrimp (since all our "fresh" shrimp around here is frozen anyway, it's cheaper and just as good to buy the big bags of the frozen stuff), some red bell pepper, onion, garlic, and throw in some cumin, and I'll probably wrap it in a tortilla with salsa, sour cream and black beans.
Mmmmmmmm......I'm making myself hungry just thinking about it!
I'm having salmon and couscous. On Monday and Wednesday evening my husband has school, and we don't have dinner together. I always make something he doesn't like on those nights - usually seafood or thai.

Since I know nothing about how to cook Thai, I was actually thinking of ordering out since I have NEVER ever had Thai before and I've always wanted to try it. Problem is, I'd have no idea what to order!

Check out the "ethnic" section of your grocery store. You should be able to get a packet of Thai seasoning or something like that. Some thinly sliced red bell peppers and some chicken tenderloins with a seasoning packet over rice noodles would be good and it would be a good way to introduce you to cooking Thai food. Some cilantro and lime would probably zest things up nicely too.

I agree. I am a pretty picky eater and don't deal well with really spicy things and I love pad thai.
I don't know how healthy it is though, I've never paid much attention. Sometimes I've had it and it didn't seem at all oily, other times it was totally coated in sauce. It also depends on what kind of meat or tofu you get. A lot of places will let you get it without egg but I don't know how much healthier that makes it.

For some reason I've been craving lasagna lately so I might make spinach lasagna tonight. I've also been wanting to try my grandmother's spinach-ricotta balls recipe so I think I'll try to do them at the same time and then freeze them.
