So I got in a baking mood Friday, and I spent the whole night searching online for new cookie recipes. I found these two...and they are AWESOME! Just wanted to share:
Oreo Truffles: courtesy of recipezaar.com. My notes are in italics.
1 lb. Oreo cookies (recipe says it's 3 sleeves... I used a whole package). You can use regular or double-stuf (my grocery store was out of regular)
1 8 oz. pkg of cream cheese (I used the light variety)
1 lb. baking chocolate. You can also get melting chocolate (the kind you use for choc.-covered strawberries)
1/2 lb of white chocolate (I used melted white-chocolate chips)
Using a food processor, grind cookies to a fine powder. (I used a blender b/c I don't have a food processor. It works but it is a pain in the ass!)
With a mixer, blend cookie powder and cream cheese until thoroughly mixed
Roll into small balls and place on wax-lined cookie sheet.
Refrigerate for 45 minutes.
Line two cookie sheets with wax paper.
In double-boiler, melt milk chocolate. (I used a microwave, worked fine)
Dip balls and coat thoroughly.
With slotted spoon, lift balls out of chocolate and let excess chocolate drip off.
Place on wax-paper-lined cookie sheet.
In separate double boiler, melt white chocolate. (again, I used a microwave)
Using a fork or pastry bag, drizzle white chocolate over balls.
Keep refrigerated!

2 cups white sugar
1 cup butter
2 eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 2/3 cups vanilla baking chips
4 ounces macadamia nuts, chopped
Preheat oven to 350 degrees F (180 degrees C).
In a large mixer bowl, beat butter and sugar until creamy. Add eggs and vanilla extract; beat until light and fluffy.
In a separate bowl, stir together flour, baking soda and salt; gradually blend into butter mixture.
Stir in vanilla chips, and macadamia nuts. Drop by rounded tablespoonfuls onto an ungreased cookie sheet.
Bake for 9 minutes. (Do not overbake;cookies will be soft. They will puff while baking; flatten upon cooling.) Cool slightly, remove from cookie sheet to wire rack. Cool completely.

My first waitressing job when I was 18, was at this nice restaurant and I was kind of straight laced. I wasn't old enough to serve drinks and wine at dinner so I was a busboy and I could wait tables at lunch.
I heard this waitress once, describe a dessert as Sex on A Plate as I was busing a table and I almost dropped a pan of dishes on the floor laughing and I have always loved that saying.

I've never heard of vanilla baking chips...are they like white chocolate chips? Can I substitute white chocolate? Cause white chocolate macadamia cookies are one of my favorite and I'd LOVE to try making some.

I don't know if they're different things or not, but I could only find white chocolate chips, so I used those and they turned out fine.
