so tomorrow is my day to bring the snack to my son's preschool class. it's suppose to be a healthy snack but most times parents just bring in those little snack bags of goldfish... or last week it was chocolate rice krispie treats (is that healthy?) with monday being his birthday, i thought i'd do a healthy take on birthday cupcakes. i found a recipe for carrot muffins and baked them this afternoon and just finished frosting them with a *tiny* bit of homemade cream cheese frosting. but then... i didn't want the other parents to think i was bringing in "junk food" (because they really do just look like a cupcake) so i sliced up the thinnest little slivers of carrot strips and added them to the top of the frosting so that it was clearly a carrot muffin and not a chocolate cupcake.

what a dork i am! why can't i just bring little snack bags of goldfish like everyone else? i just spent WAY too much time on something for a group of 10 two-year-olds who'd most likely RATHER have goldfish crackers.

they are really tasty though...

That's so awesome! I bet the kids loved having something other than goldfish or other crackers.

I bet the other kids will wish their parents had taken more time with their snacks. Your son will be grateful he has such a thoughtful mom!!

aw, thanks girls. the muffins were a hit... several parents actually thanked me and commented on how nice it was that we baked something from scratch.

ncshopper – i found the recipe in an old issue of martha stewart baby of all places. i will be making more — they were very a delicious treat.

I didn't know there was such a thing as Martha Stewart Baby, I'll have to check that out.  They sound really yummy and cute!  And I think it's great that you took the time to make something from scratch.  I'm sure the kiddos were excited!

did you notice how i said, "old" issue of ms baby? unfortunately, they stopped publishing this magazine a few years ago. luckily i kept all of my old issues from way back.

have you seen martha stewart kids? they combined a lot of the baby stuff into the kids magazine. check that one out if you haven't already.

This is so cool...your son is so lucky to have such a thoughtful mom!

Our school district no longer allows students of any age to bring in anything homemade to share. They have to bring it in packaged, with a seal, before it can be served. Sad, huh?

Oh you are so NOT a nerd!  They sound absolutely yummy!  If only you knew my co-worker, she's obsessed with food and cooks gourmet food for the office of 4 people all the time.  (It's not as cool as it sounds b/c she's also very egotistical about it).

Aww, that's too bad!  I've heard you mention MS Kids though, and I've been meaning to pick up a copy.  Is it published monthly?  Do you think it would be worth getting a subscription?

i think MS kids is quarterly (spring, fall, winter, summer). i used to get it for free — don't ask me how — it just came packaged with my regular MS subscription for years and years, but all that has stopped so i just sent in my subscription card. i think it's a great magazine. i have kept all of my back issues and i reference them constantly.
