Here is a recipe for a really yummy cake that was brought to our office luncheon. It looks beautiful, tastes totally homemade (even though it involves cake mix from a box) and is really easy. Just thought I'd share:
Chocolate Cherry Bundt Cake
Ingredients:
Cake:
1 pkg Devil’s Food cake mix
1 large can (16 oz) cherry pie filling
˝ tsp almond extract
Fudge Chocolate Frosting:
12 oz bag semi-sweet chocolate chips
4 T milk
2 T butter
1-2 cups, powdered sugar
1 tsp almond extract
Instructions:
Make the cake mix according to package directions, except OMIT the oil and add the cherry filling and almond extract. Bake in a bundt pan according to the package directions.
Frosting: Melt chocolate chips in a double broiler. Remove from heat and stir in milk and butter. Mix in powdered sugar until frosting reaches desired consistency – it should be somewhere between a glaze and a frosting. Pour/spread over cooled cake.
It's really good. The icing dripped down the sides a little and it looked like something from a cooking magazine. Also, my coworker told me today that she always uses 3 medium sized eggs, even if the box says to use fewer than that. I think that's what made it so moist.
