For those of you with a crockpot and a Trader Joe's nearby, I read about this idea for a quick dinner from someone on my mom's listserve. I thought it was a great idea and worth sharing:
Get one of Trader Joes' many simmer sauces (their Indian sauce works really well) and put a little bit in the bottom on the crock pot, add boneless, skinless raw chicken breast, pour the rest of the bottle of sauce on top, and then turn the crock pot on for about 5 hours on high. The chicken is super tender and beautifully seasoned and I have dinner ready at 6:00 with almost zero effort. I usually serve it over rice or pasta depending on what sauce I’ve used.
Does anyone know of a good simmer sauce that would be worth trying? Also, I think you could also cook it for a longer time period on a low setting.
