Okay, as some of you know my little 6 month old is getting baptised (for which we ordered fabulous invitations designed by hotcocoa btw) Saturday. We are having a really big filling lunch afterwards at Maggianos. We want to have everyone that travelled for this occasion over for a light dinner Saturday night. I am thinking about making some kind of soup and having a nice dessert b/c people will probably still be full from lunch. I could do what my mom does after a big get together and serve her homemade tortilla soup (but I've never made it before). The other alternative is to simply buy something (i.e. tortilla soup or something similar) from Whole Foods or a restaurant and then make a desert. I'm thinking I might make a pear cobbler but I'm hesitant b/c I haven't tried the recipe. Anyway, I know this is long but does anyone have any ideas? Maybe I should make cute little sandwiches or something--oh or get some mini quiches at Costco and serve with a spinach artichoke casserole. Is there anything else that I can get at Costco that's similar to that--cute but cheap and yummy??
Any advice would be greatly appreciated--sorry for the rambling!
i know cost co has those little bread balls filled with spinach and artichoke, mushrooms, etc. and they are really good! you just have to pop em in the oven for awhile.. you could just do those, a veggie platter, crackers and cheese, and dessert....
I was also going to suggest doing just appetizers. Cheese and crackers, fruit, frozen things that you can just heat up (potato puffs, mini quiches, etc.), but this will probably be more $$$ than making a big pot of soup.
Can your mom help out with the soup since she's made it before? Then you can just get some bread and a frozen dessert from Costco and you're all set.
Hey girls--thanks for your responses. My mom was going to help me with the soup but we were really tired and ended up ordering pizza (we had a smaller group than we thought too) and watching football. However, I'm intrigued by those stuffed bread balls at Costco. Ritz--are those things in the frozen section or with the breads in the bakery? Going to Costco this weekend, thanks!
