Quick/Easy Recipes

So as some of you may remember, I'm not the world's most talented cook, and my BF usuallly does most of it, but recently I've been trying a few different things.  I've made Tacos, Chicken Fajitas, marinated chicken breasts, etc. 


Can you girls post any fairly easy and/or quick recipes you might have?  Nothing too complicated, but nothing like grilled cheese either   I'm really enjoying learning.

I've posted this before, but it's one of my favorite. Takes under 30 minutes from start til its on your plate and they are fantastic! Also, super good cold the next day.

I'm trying all of these!!! I bought the stuff for cricket's balsamic chicken at the store this week (i didn't own vinegar?)

The easiest but yummy thing I do it cut up chicken breast tenderloins ( i like them better for whatever reason) & brown the chicken, throw in a bag of any kind of veggies & a 1/2 bottle of asian sauce (i prefer House of Tsang's Koran Teriyaki) but all the flavors are here & you can get most of them at Walmart / Target http://www.hormel.com/brands/brandview3.asp?id=55&catitemid=2

Put a lid on it & let it go for 5-7 minutes & you are done!

I am doing chicken caesar salad wraps tonight - brown chicken same as above, toss with lettuce, parm cheese & caesar dressing, then put in Flat Out bread

Ta da! That Flat Out site has some great recipes on it too!

I also do pita pizzas - we use either pita bread (leave whole & round) or that flat out bread as crust, add pizza sauce, whatever ingredients you want - I love the turkey peperoni, baby bella mushrooms & garlic - top with moz cheese & put in the oven for 10-15 mintues - easy breezy babe!

Everyone gave some great suggestions on this thread too - I'm in the process of making them - most of it looks really easy.

I'm a firm believer in that if you can read you can cook, although I'm told this isn't true. But I always like to have a recommendation if possible because I hate to waste ingredients & my time if I don't have an "ok" that it's good!

Well, I don't have an exact recipe for this, since I just make it up as I go, and it turns out slightly different each time, but I think it is called cappelini pomodoro.  You could probably get an exact recipe online. 


I cut up a bunch of roma tomatoes (about 6, more or less depending on what I have) and fry them in a couple teaspoons of olive oil with about 2 cloves of garlic (I use the minced garlic in the glass jar, found in the produce section of the grocery store), half a medium red onion, chopped, and fresh (about 2 tablespoons chopped) or dried (about 2 teaspoons) basil.  I fry all this on medium for maybe five or six minutes, then put it over angel hair pasta.  Then I serve it with a chicken breast and either parmesan or feta cheese.

OMG - thanks for posting this.  This is one of my favorite Italian dishes!

jacL--your pasta recipe sounds wonderful.  I hope you don't mind but I took the liberty of writing it out in recipe form (altered it a little to suit my preference), so that I can save it in my Word "untried recipes" file.  I thought I'd post it here in case anyone is interested:


Angel Hair Pasta with Roma Tomatoes


Source—ST forum (JacL)


Ingredients:


6 Roma tomatoes, diced


2 teaspoons or 2 cloves minced garlic


2 teaspoons of olive oil


˝ medium sized red onion, chopped


2 TBS fresh basil


1 package, boneless, skinless Italian seasoned grilled chicken breast


˝ cup Reduced Fat feta cheese


1 package, angel hair pasta, al dente


Directions:


Cook pasta.  Grill the tomatoes in olive oil with garlic (I use the minced garlic in the glass jar, found in the produce section of the grocery store).  Add half a medium red onion, chopped, and fresh basil.  Grill on medium for about five or six minutes.  In another skillet, grill chicken breasts.  Pour tomato mixture over angel hair pasta.  Serve with grilled chicken breast and sprinkle with feta cheese.

Last night I tried this weight watchers crock pot recipe and it was amazing!  The sauce was really good.  Hubby LOVED it, and I'll definitely make it again.  It's really simple as well.  I served it with salad and a baked potato, but rice would be good as well.  I'm still working on my menu plan and I will post more tried and true recipes when I get a chance (I know some of you have asked--sorry it's taking me so long):


Crock Pot Cranberry Chicken

4 servings at 5 pts. each

4 boneless, skinless chicken breasts
1 envelope Lipton onion soup mix
1 can cranberry sauce
8 oz. bottle FF Catalina salad dressing

Spray crock pot with Pam. Place chicken breasts in crock pot.

Mix the soup mix, cranberry sauce and dressing together. Pour on top of chicken.

Cover and cook on low 8-10 hours.

No problem!  If you are wanting quick and easy recipes you must get a crock pot.  I actually bought one last winter but just started using it and have discovered that it is one of the best inventions ever made!  Seriously, you should get one.  All I had to do for that cranberry chicken was dump it in the crockpot--I didn't even have to stir anything.  It took all of about two minutes and then it was done when I got home (and the house smelled like I had made a home cooked meal).  The one I got is by Rival (I'm pretty sure), it is the bigger model, it's stainless steel and I got it at Target.  Actually, mikacat recommended it if you want the specifics on it.  It's a good one.

yes, you must get one!! if i get home from work in the morning, i will throw some au jus in there along with a roast, and then we have a warm meal for dinner (if i don't have to work the next day). i also make sure that i have french rolls and we can use the au jus mix, ketchup, bbq, and have sandwiches with left overs. this would be perfect for you since you can make it in the morning (it takes five minutes) and come home to a nice meal.

it was so cute and i was so proud, but i bought a crock pot when i wanted to cook for my bf when i was visiting him (when i was still on the east coast in college) and so i made him a roast (while i shopped downtown). anyway, he loved it and a couple weeks later he called me and told me that he made a roast on his own!! THIS WAS HUGE FOR HIM....so seriously, anyone can use a crock pot.

also, i love the crock pot or slow cooker recipe books with pictures. crock pot recipes are usually super easy to make, cost efficient, and you there's a ton of low fat recipes.

i'll post some when i get a chance.

This is awesome.  For some reason I just couldn't think of it in that way last night. 


Also, I totally agree with everyone on the crock pot.  So easy!

I wanted to thank everyone for posting all of these great recipes, I've made quite a few and they've all turned out awesome.  So far I've made the tator tot casserole, pot roast, parmesian crusted chicken, and chicken cordon bleu...they were all incredibly easy & fast & sooo good.


I can't wait to try the cranberry chicken, I've been looking for a good crockpot recipe, it's so nice to come home & have my house smell so good.


Anyway, I just wanted to thank everyone & let you know I really appreciate it.  I'll be sure to psot any good recipes I come across.

btw I didn't read all the reviews but it looks like some ppl complained about a burnt smell or something--I haven't had that problem at all.  I have no complaints about this crock pot and the features are great--it's really big, doesn't look ugly and the actual pot is removable so you can put it in the dishwasher (i.e. w/o having to worry about the cord, etc.), and most importantly it cooks really nicely. hths!
