When it gets cool I always make my favorite easy easy soup. As you can see from the list of ingredients, it is not low fat, but it is SO YUM YUM & easy.
Crawfish Corn Potato Soup
1 stick butter 1 chopped onion 1 bunch chopped green onions 8 oz package mushrooms (sliced) 8 oz cream cheese Quart of 1/2 & 1/2 2 cans corn (drained) 2 can potato soup 1 pack crawfish tails (12-16 oz)
Melt the stick of butter, sautee onion, green onions, and mushrooms. When these are soft, add cream cheese, 1/2 & 1/2, corn, soup, & crawfish. Season to taste (I use Tony's, but I think that's a Louisiana thing). Cook about an hour, but the longer you let it cook together, the better!
I sometimes add a can of new potatoes if I want to make it chunkier (and I usually do). I can usually find frozen crawfish tails at Walmart - even in Texas - I use the Bernard's brand & I rinse them after they are thawed - I don't like all that "stuff" on them. You can substitute shrimp as well, but I never have.
