Mid November I'll be hosting a light dinner for a club I belong to. There will be 5-15 women there, arriving at different times and eating in different areas of the house. Not a sit-down dinner at all. I'm trying to decide what to serve that has a fall/Thanksgiving type theme to it. Any suggestions? What I would LOVE is at least one thing I could make ahead of time and freeze. I want to have a pretty decent sized spread out, so any suggestions are welcome! Appetizers, soup, dessert, anything!

also maybe little mini pumpkin tartlets - like pumpkin pies but tiny - i saw a tray of them for sale at the grocery store but i bet they'd be pretty easy to make

I agree, a make-your-own turkey sandwich bar would be really fun! And I also love the idea of mini pies/tartlets. You could have the mini pumpkin ones that indiekitten recommended and maybe mini-pecan pie ones too.
Don't forget sweet potatoes to go with the turkey.....yum.......I'm getting hungry!
Let me know if you want a really easy cranberry sauce recipe. I don't even like cranberry sauce but someone on here convinced me to make my own last year and I loved it. Plus you could make it a day or two in advance.

you can bake pumpkin seeds and put them on the tables for people to snack on.
you could make the soup, freeze it, and serve it in mini pumpkins. i have a super easy pumpkin soup recipe from last month's self magazine if you want it.
oh, and you can make pumpkin bars with cream cheese frosting. i'm not really a fan of pumpkin flavored items, but those are sooo good.
i also love the idea of the turkey sandwich with all the fixins'

i like to slice the top rind off of a round brie, but you can leave it on if you like it.
take a roll of pillsbury crescent rolls and roll the whole thing out flat on a greased cookie sheet, pushing together the perforations.
put the round brie in the center, and spread the top part with apricot jam. top that with a few tablespoons each of brown sugar, chopped pecans, and chopped dried apricots. then fold up the sides of the pastry dough around all of it and press closed at the top.
bake at 325 for about 15 min (or until the pastry is browned on top). it will all melt together and then you just serve with crackers. it's delicious. you could also do raspberry jam with sliced pears or any other combo you like.
