leftover pot roast ideas??

So i made a pot roast last week but the meat was still very tough - anyway there's alot leftover and i was wondering if you guys had any ideas of what i could do with it to use it up - i hate to throw it away ...  (poor college student and buying a roast was already a stretch!)

My brother makes post roast strictly for the leftovers. He makes what he calls white boy burritos. He puts the shreaded meat in tortillas with some cheese and sometimes salsa. He even puts the potatoes and carrots in sometimes. they are actually pretty good.

My husband likes the pot roast breakfast burrito at Mimi's Cafe.  It is just a regular BB with a little less egg, pot roast, potato, salsa maybe?, etc.

get some au jus packets (near the fajita packets) for $.90 at the grocery store.  put the pot roast on a bun and dip it into the au jus sauce.

no problem.  i bought my bf a crockpot when i came to visit him one weekend (we were long distance) because i wanted to cook for him and he had noooo cooking items. so i threw a pot roast in the crock pot.  he liked it, but he love the french dip the next day even more!  it's funny cuz he doesn't cook, but once in a while i will come home and he will be making pot roast just for the french dip.  i have to say, i was pretty proud of him the first time he made it, even if you can't mess it up. 


enjoy, i might have to make it tomorrow when he gets back in town (i love having dinner planned...THANKS).
