I just made some artichoke lemon pesto and thought I'd pass the recipe on because it turned out really well! There is no recipe per se because I saw this at the grocery store and decided to make it myself instead of paying like 9 bucks for it, so here goes:
1 jar marinated artichoke hearts
Juice of 1 lemon
1/4 cup grated parmesan cheese
Olive oil
Salt and pepper to taste
I basically put all of these ingredients in a small food processor minus the olive oil and streamed in the olive oil as the food processor was going until its blended. You can put it on a nice piece of crusty bread as is or mix it with some mayo and some more parmesan to become more of an artichoke dip.
