OK, I'm disgusting, but the trick is using enough butter (or margarine).
You put the butter in the pan and let it heat up. When it starts bubbling I usually throw one piece of bread in there and immediately take it out (just want to get butter on it) then I put the other piece, the cheese and the buttered piece (butter side up) in the pan. I keep checking it so I turn it over as soon as it gets golden. If the pan is dry when it's time to flip, I will add a tiny bit more butter (but not much cause your bread is already buttered). Flip the sandwich and let it cook (this side doesn't take long at all) until golden.
Using butter is most delicious way to get the outside of the bread nice and toasty. I'm sure there are other ways, but I'm not scared of a little grease. . .

I butter one side of each piece of bread kind of heavily. Then I toss it on a pan that has been heated up to medium heat. Then I put a domed lid from a pot over the sandwich on the pan so it makes a little oven. Then repeat on the other side. This ensures that the cheese melts really well and the bread isnt just toasted.
I don't put any butter in the pan, but I do make sure it's heated, and I butter one side of each slice of bread. I put the 1st piece of bread in butter side down, put about 2 slices of cheese on top, then put the other slice on top of that butter side up.
From there, I lower the heat to a little below medium, then, I just keep flipping it up to check to see how toasted the bread is, once the bread is nice & toasted, I flip the entire thing so the buttered bread that was on top is on the bottom. Then just wait for this side to get toasted & for the cheese to melt - this takes very little time - I would say under a minute.
Just keep a close eye on it so you don't burn it...also, the less butter you use, the less greasy it will be & less likely it will burn...I just spread on a thin layer & it comes out sooo good!
I butter one side of each piece of bread and then put them both butter side down on my cast iron skillet, sprinkle both pieces with shredded cheese, and cover with a lid. Usually by the time the cheese is decently melted the bread is toasty.

I put some margarine on one side of each piece of bread, put a slice and a half (weird?) of cheese in the middle, and pop the whole thing in my sandwich maker.

My mom makes the best grilled cheese sandwiches, but it didn't transfer over to me... bummer!
I've used mayo too, along with the techniques listed above, except I've added a thin layer of mayo to the outside of the bread (the side you're making crispy). I am definitely making these for dinner now...
