as I mentioned in a previous post, I'm having a passion party on Friday night... I am already making a 7 layer mexican dip.. can anyone think of any mexican/latin appetizers (easy ones!) that i can also serve, and does anyone have any easy sangria recipes or any desserts?


the party is at 8ish and i get home usually around 6:30, so i need things that i can put together very quickly.

i just made sangria !! 


it's a sangria mix ( there is red and white) box wine type thing..  and you just cut up lemons, limes, strawberries, grapes and which ever fruit you want and throw it in.


as for cooking, i'm bad at that.

Maybe make up a bunch of quesadillas (cheese, black beans, corn, jalapenos in between two flour tortillas). Bake for 10 mins. Then cut them into wedges (like a pizza).

maybe a cheese dip---Rotel and Velveeta together.


fresh salsa or guac dip


or how about a fajita bar or nacho bar?


you could do the cheese, tomatoes, lettuce, salsa, sour cream, black olives the night before---


when you get home just do the onions and peppers and chicken and throw the tortilla shells out there and voila!


I have the easiest low fat chicken fajita recipe ever---it is just a little salt, oregano, and chili powder--cut the chicken up in small pieces and broil in oven for 5 minutes.


or you could buy some of those frozen appt things---they have all kinds of mexican stuff.

These are great, easy & can be made ahead of time. Just if you do make them ahead, layer damp paper towels on the bottom of the dish so they will stay soft.

Mexican Pinwheels
4 oz sour cream
8 oz cream cheese
1 package med taco seasoning
picante sauce
1 package flour tortillas

Mix sour creeam, cream cheese, taco seasoning, & enough picante to add color. Spread mixture on chilled tortillas & roll. Cut into bite sized pieces; serve with picante.

Black olives minced also optional!
