Ok, I need major help from you girls! I am a college grad, living alone, and can't seem to find a good menu that works for me. I am extremely picky and hate to cook. I don't have much extra time or energy to bother making big meals, also have to make small portions as it is only for me. I was hoping you could help me figure out some things for me to make that are quick and easy. Im not a big fan of any type of deli meat, so making sandwichs of such are out of the question, but open to all other suggestions :) I just need a starting point i think, as i go to the grocery store and literally go down every aisle and have not a clue what to buy, you think at age 23 i would know how to grocery shop, but i apparently not!!
Hope you girls can help with some great recipes and pointers :)

some of my quick and easy meals for when I am just cooking for myself are:
veggie burger/ chicken patty on bread (I dont usually buy rolls since I dont eat them fast enough), oven fries.
can of soup and a grilled cheese
spinach and mozzarella quesadilla (sautee spinach with olive oil and garlic, put in tortilla with the cheese and fry until it's browned and cheese is melted)
I always think that casseroles are the way to go. You can just reheat them when you need them, freeze them when you don't. And these days, you can get smaller baking dishes to arrange them in.
I always make stir fry when I have to cook. I'm the worst cook ever and this is actually hard for me because I have to make rice AND stir fry. I just put brown rice in the rice cooker and then sautee with oil broccoli, onions, snow peas, carrots, water chestnuts, peppers, mushrooms, and those little skinny shoot things that look like noodles. And I put soy sauce, ginger, brown sugar and garlic in too. I don't know if that's actually how you make stir fry, but it tastes good.
I think I would also eat a lot of soup if I lived alone.
Take pita bread (leave it whole, don't cut it) spread a little tomato sauce on it (from a jar) Throw a few slices of tomato on top of the sauce put a few dollops of pesto on top of the tomato (pesto also from a jar) Top with shredded mozzarella cheese, and a sprinkling of parmesan.
Then stick it in the toaster oven for about 10 minutes. It's really tasty and so quick. If you buy the cheese already shredded, the only thing you have to cut up is the tomato.
i liked to make omelette, scrambled eggs, anything with eggs basically. i also ate a lot of soup.....and lots of pasta with chicken, when i think of some more stuff, ill post.
This is really good. Sautee some roma tomatoes in olive oil, ad some garlic (the minced garlic in a glass jar is so much easier to use than fresh and tastes just as good) and italian seasoning. Add pasta, parmesan or feta, and chicken and--voila--you have a quick and easy meal!
