glad to see so many posts yesterday


b: puffed kashi, blueberries, silk


s: orange, small pack of pringles


l: taco bell


s: zone bar


e: ok, i'm gonna try & motivate today & do the stairs.  i've done nothing all week, except salsa.


eta: so i guess i jinxed the post... i'm still kinda sick so i think i'm just gonna go home & rest, i'll start over next week!

E: 15 min walk/15 min run, some ab, arm, and leg workouts

Hmm, I might start posting in these threads now, since I've put myself on a healthier diet and exercise plan!

Anyways, here's today:

Breakfast: 16oz latte, 2 pieces toast with real butter

Lunch: Wendy's Homstyle Grilled Chicken fillet, half the thing of Med. fries (bad me), few sips Mr. Pibb

Dinner: Half a package of Lipton's Chicken Pasta Side, 2 white dinner rolls w/real butter, Large glass water

Still managed to stay pretty near my calorie goal too...Woohoo!

Exercise: Just some crunches and back toning exercises

b: ww english muffin w/ natural pb and jam, nf cottage cheese, coffee


s: co-workers birthday... slice of cake, vege tray, and chips and salsa


l: 1/2 a ww pita with turkey, lettuce, and cranberry sauce, soy crisps, and lf string cheese


s: ice tea and small wedge of dark chocolate (TJs traveler's chocolate in the tin, perfect serving size), luna bar


d: huevos rancheros


s: popcorn, white zinfandel spritzer


e: 1 hour cardio, phew I'm whiped.

d: veggie burger (OMG it was so good! It was at a BBQ and it was homemade and big like a "real" hamburger), 1/2 of a brownie, 2 light beers

snack:  yogurt, green tea


l:  turkey sandwich


snack:  apple, granola bar, pita chips and hummus when I got home


d:  grilled portabella on spinach salad w/ pinenuts, bleu cheese, onions


exercise:  nothing really    I cleaned around the house and re-caulked the bathtub--does that count?

L:California Roll Sushi - Side Salad with spinach, carrots, cucumbers, cheddar, guacamole, and fat-free italian dressing - Dinner Roll - 32oz water


S: Banana


D: Shrimp and Scallion Skewers with Creamy Grilled Pepper Sauce over Brown Rice - Fat Free Vanilla pudding snack or 100 Calorie pack Oreos.

Sure, here's the recipe.


Shrimp and Scallion Skewers with Creamy Grilled Pepper Sauce



Ingredients


1 medium sweet red pepper(s), quartered
3 serving olive oil cooking spray (5 one-second sprays per serving)
1 cup parsley, fresh, leaves (loosely-packed)
1/2 cup fat-free mayonnaise
7 medium scallion(s), chop 1 and slice the others into 6 pieces each
2 tsp lemon zest, freshly grated
1 Tbsp fresh lemon juice
1 medium garlic clove(s)
36 large shrimp, fresh, peeled
1/2 tsp table salt
1/2 tsp black pepper, freshly ground





Instructions



  1. Preheat grill or grill pan. Coat red pepper with cooking spray. Grill, turning as needed, until lightly charred and tender, about 10 to 15 minutes.

    To make sauce, place grilled pepper, parsley, mayonnaise, 1 chopped scallion, lemon zest, lemon juice and garlic in a food processor. Pulse until mixture is blended and ingredients are finely chopped; set aside.

    Thread 3 pieces each of shrimp and sliced scallions onto each of 12 metal skewers. (Note: If you’re using wooden skewers, soak them in water for 30 minutes before use to prevent charring.) Lightly coat shrimp and scallions with cooking spray; sprinkle with salt and black pepper.

    Grill skewers, turning once, until shrimp are just cooked through, about 2 to 4 minutes. Yields 2 skewers and about 2 tablespoons of sauce per serving.
