It's the potato salad version of a stuffed baked potato.
Memorial Day weekend I threw together this salad, and it was a hit! I made it again for Father's Day (it was requested by Dad) and I thought I should share the recipe here for those making a potato sald for the Fourth of July. Here it is:
Boil baby red potatoes until easily pierced with a knife.
Meanwhile mix together 2 parts Miracle Whip, 1 part Ranch dressing and 1 park yellow mustard. Mince 1 large shallot and 2 cloves of garlic (I use thr microplane).
Fry half to a whole pound of bacon, cool and chop.
Slice one bunch of green onions (I slice very thin on a very exaggerated angle). Chop very finely a bunch of chives.
Shred some cheese.
Drain potatoes, let cool, dice and stir into the mustary mix. You should have the potatoes coated, but barely, so that if this were the only dressing it would be a dry potato salad.
Add almost equal parts of sour cream and mayo (more mayo than sour cream). Add shredded cheese, bacon and green onion/chives. Stir together, chill for a few hours and enjoy. You can save a little of the cheese/bacon/onion mix as a garnish if you want.
So, there it is. Very simple and it's getting high reviews. I don't have a real recipe so I can't really provide real portions. It's not exactly healthy, but it is good. I actually leave the bacon and chive/onion mix on the side since I'm veggie and so many people have an aversion to onion.
