Thanks for asking this. I bought a denim jacket last year and have yet to wear it once because I too don't know wat to wear it with. Certainly don't want to do head to toe denim.

i wear mine w/ everything but it's not exactly denim.  it looks like a jean jacket but it's not, it's made of like a thin sweatshirt like material that really conforms to my shape and isn't boxy at all.  oh and it's cropped too, it hits me at like my upper waist.  i got it forever ago at bcbg and it's one of the most versatile pieces in my closet.  a couple of outfits i wear it w/: ella moss green dress; juicy brown corduroys w/ a pink l/s shirt underneath (and a jenerations rose colored lariat necklace which i get complimented on constantly!); bcbg long white skirt w/ yellow tank w/ lace trim; and twelfth street white silk dress w/ tons of brown and turquoise on the skirt part of the dress.  if i ever get a digital camera, i'll post 'em all.  overall i think the key to not looking boring or sloppy is to make sure the jean jacket itself fits and flatters your figure.  oh and this is jmo, but i don't think i'd ever wear a jean jacket w/ jeans.  anyway, hth! 

Key advice: You can wear a jean jacket with anything EXCEPT for jeans!

So you can wear it with black pants, white pants, khakis... etc. But whatever you do, don't wear it with a pair of jeans!
