I am serving: ~ rosemary and olive oil roasted chick peas ~ guacamole & tortilla chips (made with these huge avocados from Florida called "Slimcado" - they're supposed to be lower in fat too ~ nachos - heat beans on the stove and add water so that they can be spooned over individual beds of chips on plates. sprinkle cheese on top (for the guy's nachos), stick in the microwave for 1.5 min, then sprinkle chopped tomatoes and jalapenos on top and top with guacamole and salsa. eat with fork and knife because they're sloppy, but good
ETA: guess they won't be eating vegan since they'll have cheese on their nachos...

DH and I are going to a superbowl party this afternoon where not a scrap of vegan food will be in sight. However, I have a wonderful pot of vegetarian chili on the stove right now, just simmering away. It is vegan, but I'm sure the other guests will add cheese and sour cream to their bowls.
I am super excited that you are serving a vegan feast for the boys. They won't mind at all, judging by your menu. I want to try making those chick peas. I saw the recipe inthe other forum and jsut need to get out to get some fresh herbs. It sounds amazing.
Chili is in the slow cooker right now, plus there will be cornmeal biscuits and lots of guacamole and salsa with chips. The chili has red beans, black beans, onion, garlic, roasted poblanos, roasted jalapenos, a big can of diced tomatoes, cumin, chili powder and smoked paprika (my new favorite spice). If it's watery I'll throw some TVP in a half-hour before serving.
The only person coming who's a serious carnivore is my brother, but I've been cooking for him since he was about seven so he's under the impression I'm the world's greatest chef and he'll eat anything if I make it.
