low fat egg salad recipe?

Anyone have a good one?  I'm currently addicted to egg salad and pita sandwiches, but the brand I get at the grocery store is sooooo bad for you.  I'm looking for a lighter alternative if anyone has one.  Thanks!!

Thanks lsu, I would appreciate it!  I looked around at epicurious, cookinglight and foodnetwork but didn't find anything too enticing.

i jsut make my own using the low fat mayo from best foods, they came out with one in a green jar...i think it only has 2 grams of fat per serving? not too sure..lol i dont know if this even helps

Actually I love light mayonnaise, but the no-fat version in the green jar is disgusting!

I like using Hellmann's Light (not the Ultra light-blick) and I cut back on the yolks, which I don't really miss. A little green onion, salt and peppa......ta da.

hmm I'm not a fan of the stuff but I did find this recipe for you on a WW forum. It might be worth a try.


Kelly's Egg Salad - 1 Point

Recipe By : Kelly Shields
Serving Size : 6 Preparation Time :0:00
Categories :
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 eggs, hard-boiled -- chopped
1/4 cup chopped celery
1/2 tablespoon chopped onions
2 tablespoons Miracle Whip® Free
1/2 tablespoon Miracle Whip® Free (wasn't sure if this is right I just cut & pasted)
1/8 teaspoon salt
pinch black pepper

1. Mix all ingredients together.

Calories: 46.1  (not too bad)
Fat grams: 2.7
Fiber grams: 0.1

W/W Points: 1


Serving Ideas : Makes 6 1/4-cup servings.

I agree with using low fat Mirical whip instead of mayo, it's healthier and has much more taste!
Throw in some celery and mustard for flavor. mmmmm
