Glazed Lemon Bars

1.5 cups Bisquick Original Baking mix (I used Reduced fat version)


3 tbsp powdered sugar


3 tbsp firm margarine or butter


1.5 cups granulated sugar (You could use the new baking splenda to cut cals here)


2 tbsp Bisquick Original Baking mix (same as above)


1 tbsp grated lemon peel (this is where I went wrong – I didn’t put enough and it wasn’t tart)


¼ cup lemon juice


4 eggs


Glaze (below)


 


1. Heat oven to 350 degrees.  Mix 1.5 cups baking mix, powdered sugar in medium bowl. Cut in margarine using pastry blender or crisscrossing 2 knives until crumbly (I used a fork here).  Press mixture in bottom of ungreased rectangular pan 13x9x2 inches.


 


2. Bake about 10 minutes or until light brown.  Mix remaining ingredients except glaze; pour over baked layer.


 


3. Bake about 25 minutes or until set and golden brown.  Loosen edges from sides of pan while warm.  Spread with Glaze.  Cool completely. Cut into about 2x1.25inch bars.


About 36 bars.


 


Glaze:


¾ cup powdered sugar


1 tbsp plus 1.5 tsp lemon juice


 


Mix powdered sugar and lemon juice until smooth.


 


1 Bar: 80 cals; 2 gms fat; 25mg cholesterol; 95 mg sodium; 15 gms carbs, 1 gm protein


(this maybe less since I used Reduced fat Bisquick.)


 


2 WW Points per bar

Yeah for this recipe! I love lemon bars, but they are always made from the box, never from scratch. I can't wait to try these. Thanks!

I made almost the exact same recipe last night (in the mood for sweets and it was all I had the ingrediants for!) but instead of the bisquick, I used whole wheat flor and 1/4 tsp baking powder. I also used the splenda mix and tossed in a little vanilla with the flour mixture. They cam out delicous! I had to take them away from my fiance becasuse he almost ate the entire pan!
