Thanks for all the suggestions! I've been eating it a lot with fruit and it's much yummier that way. And somedays I even eat it on its own - must be an acquired taste!

My mom has a fabulous recipe for vegetarian lasagna. Sometimes, she replaces 1/2 the ricotta cheese with cottage cheese (you have to drain as much of the liquid out before you add it). She actually just told me that over the years (when I was growing up & ate meat), she replaced the 1/2 the ricotta w/cottage cheese in her meat lasagna, but NEVER TOLD US. We never knew! It is much healthier (and lower in fat) than ricotta and you can't tell the difference.
I used to be sickened at the sight of cottage cheese, and then I decided to try it because my friend in high school convinced me to. To make a long story short, I grew to like it a lot. I love it with canned peaches, and pineapples especially. I recently tried it with banana slices and blueberry pancakes - yumm!
