Is anyone else irrationally excited to whip out the fall recipes again?! I've got alot of new recipes to try this fall, and have already made a few old favorites (winter squash mac&cheese!). What are you looking forward to cooking this fall?

I love using the crockpot! I will be making thick turkey noodle soups and I want to try lots of new recipes for crockpot cooking. Also I can't wait to start making chili either (almost weekly!).
Pumpkin, butternut squash, that sort of thing, although our Farmers Market is all about grapes and peppers right now, so I'm throwing poblanos (or are they pasillas?) in everything.
And I also agree, anything pumpkin! I have a great pumpkin muffin/cupcake/cake recipe with a homemade cream cheese icing (I also included muffin cause sometimes I just leave the icing off). I'm making them this weekend for a bake sale and I'll post the recipe then.

Have you ever tried stupid-easy pumpkin muffins? It's always the recipe I whip out in a pinch! It's literally one can of pumpkin puree (not pie filling) and one box of spice cake mix mixed together (no eggs, water, oil, nothing). I usually add either chocolate chips or golden raisins/cream cheese frosting. You can experiment with other cake mixes too - chocolate, carrot, etc. I just bake according to the directions for muffins on the cake box .
I've just completed the mac&cheese recipe and have lots of requests already, so I'll post it as soon as I get it up online!

Double posting to wax poetic about ... apples! No cooking at all obviously, but I love me some fresh local apples this time of year. Yuuuuuummmmmmmm
Tomato season is also at fever pitch around here, but I must admit I'm a little tired of eating raw tomato salads, so I've switched to roasting them. We had them tossed with farfalle in a light cream sauce this weekend.

Preheat oven to 350 degrees F (175 degrees C). Grease and flour three 7x3 inch loaf pans.
In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.
Nicoley, this pumpkin bread is really good. It makes 3 small loaves so you can keep one and give 2 to neighbors/coworkers.

My husband and I hardly ever cook from a recipe...not because we're so skilled, just because we live a crazy life (4 kids, work, pets) but we love throwing things together at this time of year. A recent dish that everyone gobbled was a pumkpin ginger soup. I used the leftover soup and threw it in some whole grain batter and made pancakes for the kids on Sunday.
Another simple trick to use all those gorgeous root veggies from the farmers market is to cut them lengthwise and lay parsnips, sweet potato wedges, beets, etc in the bottom of your pan and roast them when you cook a chicken. Prevents the meat from sticking and they cook in the juices. *sorry to potentially gross out the vegetarians!*

Lentil Soup! Indian recipes with creamy sauces! Stuffed peppers and stuffed zucchini! Stews! I love fall cooking. I found a recipe for roasted red pepper and sweet potato pasta that I can't wait to try. I also want to try osso bucco this year, I had it for the first time on vacation and it was fabulous!
I am actually eating pumpkin ravioli with toasted hazelnuts for lunch. YUM! I would post the recipe, but I didn't make it. My company caters in lunch every day so they made it.

As for me, I am excited to start making chili again. I usually make it on the weekends starting the fall and hang it up in the spring. I have a great recipe thanks to JMR.
