For Christmas my uncle in North Carolina sent us a box of these delicious candy-type things and I am wondering if andone can tell me what they are. They were like blobs of creamy caramel (about 2" diameter) with pecans in them - there may have been more ingredients...and they weren't chewy, really, you could bite through them easily. What are they?! And can you make them at home?

No problem Mia. I just have to go dig it out up front out of my mom's recipe book but they are really easy to make. The only thing is you can't make them on rainy days or they won't set right. They also have varites in New Orleans that you can order (Aunt Sally's) and they have a chocolate version which is heavenly. You can probably google them and they ship world wide.
Ok off to find the recipe...
Pralines
1 cup nuts (pecans or walnuts)
1 cup brown sugar
1 cup white sugar
1 cup evaporated milk
1/2 stick butter or margarine
Combine all ingredients, except nuts, in a large pot. Stir often to prevent scorching. Cook on a medium low heat until soft ball stage (approximately 240 degrees F). After soft ball test in ice water*. Add nuts and beat by hand until the mixture loses its glossy shine. Drop by spoonfuls quickly on wax paper or foil. Cool and enjoy.
*Drop a partial spoonful in cup of very cold water and try to roll it into a ball with fingertips. If the ball was well-formed but not hard, the mixture is ready to beat.
Ohhhh thank you LSU! I am going to make a batcj of these and eat them 'til I'm nauseous. Hmmm. I wonder if I will get the 'soft ball' stage right. I don't have a candy thermometer...
