This year P and I are staying in for New Year's, but we invited a good friend of mine (my maid of honor) and her fiance over to dinner (and drinks, etc. afterwards). I know I am going to make an oyster stew, but need some easy-ish ideas for some other dishes. I have been on epicurious and some other sites but nothing there appeals. I'm thinking some kind of salad, crusty bread, Champagne and ...? any creative salad and dessert ideas, or other side dishes? i know hoppin' john is traditional but i'm not a huge fan of bean dishes. what about ideas for fun, easy (but not too heavy) cocktails, or should i stick with wine and beer?
this is probably too late but here are some ideas.
for a fun beverage, i had this drink called the moscow mule a lot in japan. i think it was popular in the us during the 50s. it's vodka, ginger beer (or ginger ale), and a shot of lime juice. i thought it was really good and it's more festive than vodka tonics or sodas.
the tomato fondue that mikacat suggested sounds awesome, or you could just do mozzarella with cherry or grape tomatoes wrapped in basil on a skewer. it looks so pretty.
for easy side dishes...i don't really know what goes with oyster stew so these are just random: cous cous (one of those seasoned near east packages), roasted asparagus, some sort of squash dish.
