What are your favorite Thanksgiving recipes (turkey, sides, desserts, etc.)?

Here's mine:

Thanksgiving Stuffing

Ingredients:
1 stick unsalted butter
6 long stalks celery-chopped
1 onion-chopped coarsely
poultry seasoning-3 tsp + to taste
thyme-1 tsp + to taste
1/2 cup chopped fresh parsley
1 16oz tube sausage
1 16oz bag seasoned croutons (the small croutons)
1 15oz can corn
1 egg beaten in 1/2 cup milk
chicken broth- to hold (about a 1/2 cup)

Preheat oven to 350.
Saute butter, celery, onion, poultry seasoning, thyme, and parsley in skillet until soft.  Add this to the croutons (in a large bowl).
In a skillet, cook sausage, continuously separating with 2 forks until brown and crumbly.  Add to crouton/sautee mix.
Add can of corn to crouton/sautee mix/sausage and season with extra poultry seasoning and thyme to taste.  Add egg/milk and chicken broth so mixture holds together.  Bake for 1 hour at 350.

As a vegetarian, the only thing I'm ever asked to bring is dessert. I make a helluva pumpkin pie, although these days people seem to want the ice cream more than the pie. I make the basic vanilla ice cream from the ice cream maker's manual, then grate cinnamon sticks into it. It works really well with chocolate cake too.
