Since it's the Fourth, most of us will be making or eating potato salad. And, I don't think I've ever had the same recipe twice. Everyone I know makes it a little different.

So, how do you make/prefer yours?

I don't have a recipe, but my mom made it with sour cream instead of mayonnaise and she also added hard boiled eggs and onions. It was delicious.

I've always used mayo, dijon mustard, hardboiled eggs, onions, paprika, salt and pepper...I think that's all I use, I haven't made it since last year and I usually just eyeball everything.

This is making me want to have potato salad this weekend!

I use mustard too, miracle whip, and lots of veggies (green onion, celery, jalapeno, sweet bell peppers, cucumber) with no eggs.

I love it with cubed new potatoes, ranch dressing, and onions...

sooo good.

I love the way my mom makes it! She puts potatoes, celery, pickles, hard boiled eggs, salt, paprika (a little on the top), mayo, a little bit of mustard, green pepper. Pretty much the same as JETTIE except mymom puts pickles in it...which is my favorite part!

I make mine with new potatoes, mayo, a little mustard, eggs, black olives, onion, salt, pepper, sliced gherkins and a little gherkin juice.  Yum!

My mother in law makes hers with mostly mustard to keep it moist.  Very little mayo.  I think it's disgusting.

Someday, I will ask for the potato salad recipe from 300 East in Charlotte. It is the best I have ever tasted. On the dry side with lots of garlic, 300 East's potato salad is consistently good and hearty-yet refreshing. I've been meaning to get the recipe. Maybe they'd give it to you over the phone. I'm going to try to get it next time I'm in.
