My daughter's birthday party is tomorrow at 10am, and there will be more adults there than I had previously thought, so I need to make more food. I've already spent a wad on this party, so whatever I add, I'd like it to be on the thrifty side.
Here's what I'm making:
Hot dogs for the kids Hero sandwiches (pretty much muffuletta sandwich ~ can't wait to try!) Cheese tortellini/broccoli salad chips/pretzels cake
What else?
I'm thinking I need a fruit salad too. Any suggestions? I serve fruit all the time, but I don't make a salad, per se.
My very favorite fruit salad has bananas, berries (I use frozen mixed), and mango with chopped mint. The juice from the berries turns everything a beautiful ruby color and helps keep the bananas from turning brown as quickly. The mint is such a nice fresh taste, and a fun twist! It's my cheap go-to fruit salad, but it may be more or less so depending on where you live.
What about a veggie tray with hummus?

A fruit salad is always a hit. I always just toss together strawberries (cut in half), chunks of fresh pineapple, honeydew melon, and red grapes. Yummy!
A giant green salad can be economical too. If you're grilling, you can put citrus halves on the BBQ to squeeze the juice over the greens. It's so. Darn. Good.
Grapes also become delicious on the grill - the heat activates the natural sugars. An amazing salad would be greens dressed with olive oil, grilled lemon and orange juices, red grapes from the grill, and some crumbled goat or blue cheese.
