I get my pills through my insurance company's mail order. Last month I forgot to order more, and didn't end up getting my new pack until Thursday (but I should have taken my first pill on Sunday). I doubled up the first two days to get myself somewhat back on track. I've been on the pill continuously for 8 years, if that matters.
I know we need to use backup birth control for some point of time, but when can we stop using backup and trust the pill again?
Seven days is what Mr. Google tells me. However, I would trust the pill's packaging/manufacturing more. Whichever pill you are in should have a company website that lists information such as this. There should also be an insert within the pill packaging that says what to do.
I will tell you however- that I recently (through foul-ups on everybody's part) missed five days before it was even possible to get a new pack. At that point my doctor decided that it would be best to simply wait till the following month's period cycle to restart because of hormone balancing issues. I would simply call your doctor to make sure.
Use backup until you talk to your doctor and she tells you otherwise.
