What is everyone making?  I usually just make one or two meals and then survived on the leftovers...  This week it is "Orange-Scented Couscous Salad with Almonds, Cilantro, and Cucumber" and "Indian Summer Turkey Chili" (by Rachael Ray ).

roast chicken with potatoes and asparagus in a mustard sauce
grilled veggie paninis

not sure what else yet

Chicken and asparagus

Quiche

Sushi (we're doing carry out)

Something Mexican (haven't decided yet, enchiladas or quesadillas probably)

Pizza (helping sister move, she's buying pizza)

Something healthy, to prepare for big Easter meals with both families. (Brunch buffet and a crab cake dinner)

Mmmmm crab cakes ........

Lasagna
Spinach, ham, mushroom quiche w/ baked zucchini fritters
Baked potatoes w/creamy salsa, corn, and black bean topping
Grilled hawaiian chicken burgers (chicken breast w/grilled pineapple & cheese)
Sweet potato enchiladas
Hoisin chicken thighs

Do you use a special marinade for the chicken? Just grilled? What kind of cheese?

Relrel, I usually just pound the chicken a bit, and maybe brush it with a little sweet BBQ sauce or some honey.  Nothin' too special .  I prefer a white cheese with them (provolone, mozz, swiss, whatever) because it has a lighter flavor and better melted texture IMO.  We just grill them on the outside grill (buns, too) - yeah for nice weather!!!

I think menus is correct .... does sorta look funny if you stare too long though!

This week I did White Bean Provencal Soup and tonight I'm trying TILAPIA WITH BALSAMIC BUTTER SAUCE, THYME MASHED POTATOES, AND SUGAR SNAP PEAS from Epicurious.
