cabernet pot roast (from TJs) w/potatoes, onion, and carrot
pulled pork sandwiches with vinigar slaw and pretzels
pumpkin polenta topped w/ chicken chorizo and black beans
cuban black bean patties with pineapple rice
falafel on pitas with coucous salad

-Portobella Pizzettas w/goat cheese crostini
-Tilapia w/a soy ginger glaze, with brown rice and sauteed mustard greens
-Ham and cheese panini w/tomato soup and a romaine salad
-Pulled pork sandwiches w/cajun coleslaw and baked beans
-B.L.A.T.s (thats a BLT + avacado) w/ spicy baked sweet potato 'fries'

I figured out what's been causing my cooking-slump lately - I'm realllly tired of 'winter food'!  I'm am very very ready for fresh corn on the cobb and using the grill and making pesto from our own basil plants, because I've had entirely enough of all my cool-weather recipes.

Hey Choo - do you make your polenta from scratch?  My grocery store has dry and already prepared stuff but I've never tried it - your pumpkin version sounds delish!

i notice these from cooking light! i made the falafel w/ couscous and it was soooo good!

elle- yeah, I make it from scratch. Here's the recipe I use- its a variation on a Rachael Ray recipe, but I make the chorizo too (she uses just 3/4 lb crumbled chorizo and a bunch of other random junk that doesn't sound good at all), but I lightened it up- my recipe makes 4 servings at 5 ww points per serving- but I can't finish a whole serving myself.)

monica- I'll let you know. I'm probably making them Wednesday or Thursday.

chicken chorizo:
1 lb. ground chicken
4 cloves garlic, minced
1/4 c. cider vinegar
1/8 cup chili powder
1 tsp. cinnamon
1 tsp. cumin
combine all ingredients.

polenta:
3 c. chicken broth
1 T. butter
1 c. cornmeal
1 can pumpkin
1/2 c. FF mozzarella
bring the broth and butter to a boil. Add polenta and pumpkin and cook
until it masses, stirring constantly. Stir in cheese, salt, and pepper.

topping:
1 recipe chicken chorizo
1 onion, chopped
1 can black beans, rinsed and drained
spray a pan with cooking spray and add the chicken and onion, cook through. Add beans and cook until heated.

Ladle the polenta onto a dish, and top with chorizo and bean mixture.

That's it, I'm coming over to you all's house for dinner. Tonight we're having Hamburger Helper, I know you all are jealous   (In my defense, it's called tired pregnant lady didn't want to go to the grocery, so she had hubby pick something up at the store on the way home).

- marinated tuna steak w/ stir fried broccoli, baby corn, and snow peas
- stir fried ginger beef and tofu with sugar snap peas and baby corn
- tacos!
- marinated chicken braised with oranges and olives

Grilled marinated pork tenderloin with boxed au gratin potatoes
 
Meat loaf and mashed potatoes with gravy (special request of the BF)

Big salad with chicken breast and whatever else I can throw in

Chicken cordon bleu with a flavored boxed rice and asparagus for the BF


I don't eat veggies, so I usually steam some frozen veggies for the BF
