Week of 2/25 Menus

I was having a seriously hard time thinking of anything to make this week!  Post what you're having too - I need some more ideas!

-  Whole wheat penne w/ broccoli, onions and peanuts & a creamy peanut sauce

-  Homemade pizza w/ red onions, red bell pepper, l/f turkey pepperoni, green & black olives

-  Baked potatoes w/ black beans, corn, tomatoes, and green chiles in a (l/f) cream cheese sauce; sauteed collard greens w/carmelized onions & garlic

-  Lasagna w/steamed asparagus

-  Black bean, spinach and sweet potato burritos

-  Whole wheat fettucine w/ tomatoes, black olives, red onion, and spinach & a creamy goat cheese sauce

Apparently we're only eating mexican and italian food this week.  Hopefully since our trip to Denver is in between some of these meals, they won't feel so redundant ...

Here's a couple recent items I've made...I'm not so good with meal planning!

* Corn chowder with scallops and shitake mushrooms with bok-choy

* Salmon and crab cake/burgers with broccoli

* BLTs with broccoli

I'm supposedly making quiche something this week as well. Quiche appears easy from the recipe I have but for some reason it scares me. Something about the pie-shell maybe.

I've just discovered the Betty Crocker recipe website this past week. It is so fabulous! It has photos of all the recipes and ratings (mostly 5 stars) and reviews. I've recently done:

*Lemon- and Parmesan-Crusted Salmon with sides of Wild Rice and Green Beans (I was going to do Asparagus but they didn't look too good at the grocery store).

*Reuben Casserole with sides of Green Salad and Dinner Rolls.

Next I'm going to try (Not sure on the sides though):

*Beef-Pesto Panini

*Mexican Pasta Bake

I have an awesome quiche recipe if you'd like it - mine is for a crustless quiche, but I'm sure you could pour it in a pie crust all the same .  Let me know!

Cahabo - could you tell me more about the Reuben casserole?  Mr. Elle 's his reubens!

As of right now I'm planning to make:

a baked whole chicken (small one) with a garlic butter rub, green bean casserole, and cajun seasoned diced potatoes (so crispy, yum!)

Mexican lasagna

Italian stuffed shells with sausage

Now that I'm looking at it, my suggestions don't help too much since you already have lots of Mexican and Italian

Elle- Here is the recipe. You can use any type of mustard you like. Other people who reviewed the recipe also mentioned about using another type of meat like pastrami instead of canned corned beef. Anyways, my family enjoyed the dish (probably because we love sauerkraut!)

Reuben Casserole

3 cups hot water
1 cup milk
1/4 cup margarine or butter
1 tablespoon yellow mustard
1 package (7.2 ounces) Betty Crocker® roasted garlic mashed potatoes
1 package (6 ounces) sliced corned beef, cut into 1/2-inch pieces
1 can (14 1/2 ounces) sauerkraut , rinsed well and drained
2 cups shredded Swiss cheese (8 ounces)
1 tablespoon caraway seed, if desired

1. Heat oven to 350ºF. Grease square baking dish, 8x8x2 inches.
2. Heat hot water, milk and margarine to rapid boil in 3-quart saucepan; remove from heat. Stir in mustard. Stir in 2 pouches Potatoes and Seasoning just until moistened. Let stand about 1 minute or until liquid is absorbed. Whip with fork until smooth.
3. Spread 1 1/2 cups of the potatoes in baking dish. Top with corned beef. Spread sauerkraut over corned beef. Spoon remaining potatoes over top; spread gently. Sprinkle potatoes with cheese and caraway seed.
4. Bake uncovered about 20 minutes or until cheese is golden brown.
High Altitude (3500-6500 ft) Increase bake time to about 25 minutes.

The recipe isn't the problem...it's my mental capacity with cooking. I've only just graduated from toast so quiche is a big step up in the world.

eh, I was super boring this week. Too stressed to feel like cooking.

grilled cheese (twice )
mac and cheese and buffalo chicken sausage
carne asada with rice and beans and corn
veal scallopine with rosemary roasted potatoes and asparagus

lol- more mexican and italian.

Our dinners during the week are never very exciting, but I like reading everyone else's menu, so I thought I'd post.

This week we've had:

Black bean burgers and spinach salad
Salmon filet stuffed w/ bay shrimp (Trader Joe's) and spinach salad
Mac and Cheese
Baked Sweet Potato and Spinach salad.

Ummm...I like me some spinach salad.

On Sunday, I made ground turkey taco filling in the crock pot, so I've been eating that at lunch w/ a hi fiber tortilla and cilantro this week.
