Best dinners to freeze for easy reheating
Permalink Closed

I need some easy dinners to freeze that reheat well and still taste good.
Any ideas?

Currently we have Lasagna, a casserole and Tortillia Soup frozen.

I haven't tried freezing a lot of dinners before but want to get into the habit for easy dinner preparation once I go back to work.

My boyfriend and I always freeze extra chili and spaghetti sauce when we make it.

manicotti
risotto (freeze just before the final liquid addition, then reheat it by doing that)

cheesey potatos:

depending on how many people you are freezing for,

one bag of frozen hash browns from Orida, the grated kind
1lb of cheese
1 can of cream of chicken soup
6oz of sour cream

mix everything except 1/4 of your cheese.  place in a glass or throw away aluminum baking dish evenly.  spread the remaining cheese over the top evenly.   bake uncovered at 350 for about 30-45 minutes, until you can see it is starting to turn brown aournd the edges (or along the bottom if in a glass dish)    let cool.  freeze.  the best potatos ever.

I second chili, other bean recipes, and soups. All it requires is some good bread and a salad and there's a meal. Try also enchiladas and other hearty one-dish things.

You can also freeze simple stocks for future soup - I don't eat meat but if you do, you can boil the chicken bones or whatever and freeze the broth. Then reheat it with some rice or pasta and veggies. When I ate seafood I would make stock with the shrimp shells and tails, not that I recommend making soup out of it, but it's good to have around too.

Or roast and puree squashes like pumpkin and butternut when they're in season, freeze, and reheat with cream or broth (or both) for soups.

Ravioli and gnocchi freezes perfectly, not that anyone but me is crazy enough to make their own ravioli or gnocchi.

When it comes to burgers or chicken breasts and lots of things, freeze individually on cookie sheets and then bag them so they aren't sticking together unappetizingly.
