Okay, you're gonna think I'm crazy but it is so cold here, I wanted something warm to eat and I made this (for breakfast!)-it was really good:
This soup is creamy and a little spicy. 1 POINT for 1 Cup!
2 lbs frozen California style veggies 3 cans chicken broth (I use low sodium) 1 can Rotel Original tomatoes or any type of tomatoes 10 oz Lite Velveeta Cheese (cubed)
Throw the veggies, tomatoes, and broth in a pot. Bring to boil and simmer for 40 min. Add the cheese and let it melt as you stir it. Serve as soup or over a baked potato.
Any can of tomatoes can be used - Rotel is a little spicy.
Breakfast-soup (2) Lunch-soup (2) Special k bar (2)
Breakfast: coffee, 1/2 luna bar, lf yogurt w/ granola and strawberries Lunch: Chicken Noodle Soup Snack: Apple and later a banana Dinner: Trader Joe's Chicken and Cheese Tamale
Okay, I haven't posted in forever because it was shutting my internet down everytime I tried! Hopefully that's fixed now and I can post again ( I did bad last week anyway...probably because I wasn't being accountable and posting)
B: smoothie (4 pts) S: cashews (4 pts) L: Portobella gardenburger and wheat bun (Only 2 pts!!), Granola bar (3 pts) D: Wheat spaghetti and meat balls (about 8 pts)
No exercise today..unless I decide to go after work but I doubt it :)
