I want to throw a mediterrean themed party for my daughter. There will be some kids at the party, but mostly adults. I want to do a lot of Greek, Spanish and Italian foods. Finger foods are a plus, and things that are flavorful and easy to prepare.
2 cloves garlic 1 19 oz can of chickpeas drained 2/3 c olive oil 1/2 cup tahini sesame paste 4 tbsp lemon juice 1/2 tsp cumin 1 tsp fresh parsley salt to taste puree all ingredients in a food processor until creamy. sevre with veggie sticks and pita chips or fresh pitas.

1 pkg frozen spinach, thawed 1 bunch spring onions 2 eggs 400 grams feta cheese, crumbled 1 tbsp. fresh dill Salt & pepper to taste
1/2 lb. butter melted for filo 20 sheets filo pastry
chop the onions, squeeze all the water out of the spinach. Combine the ingredients for the filling.
brush one sheet of filo with butter, layer another sheet on top, brush with butter. Do this until you have 4 layers. Cut the sheets into 4 long strips, Place a heaping teaspoon of filling near 1 corner of the layered phyllo strip. Fold the end at an angle over the filling to form a triangle. Continue to fold the triangle along the strip until you reach the end, like folding up a flag.
-skewers with bocconcini, fresh basil and cherry or grape tomatoes or a variation like this one with proscuitto and olives
-something involving polenta - grilled, fried or baked and topped with sauteed mushrooms and a thin slice of parmesan or gruyere, or maybe roasted red pepper or eggplant. To save time you can buy the premade seasoned kind and just make slices

-stuffed grape leaves
-frittata/tortilla espagnola cut into pieces
-stuffed dates w/ bacon or ham
12 pitted dates 12 whole almonds, preferably Marcona 12 strips of thinly sliced ham, preferably Jamon Serrano Cracked black pepper
Use a small knife to cut a slit into each date. Slip an almond into each slit. Wrap each stuffed date with a strip of ham (secure with a toothpick, if desired).
Heat a dry skillet over medium heat. Add the stuffed dates to the skillet long enough to frizzle the ham just a bit and heat the dates. Transfer to a serving platter and sprinkle with the black pepper.
panzanella salad maybe good too. It's a bread salad that is basically cubes of:cheese, tomatoes, peppers, cukes, bread, onion with a vinagrette and some pine nuts. Cuisine has a good recipe.
i made shrimp ceviche for a gourmet dinner club and it was yummy.
maybe some sangria with fruit in it?
Ceviche is easy to make and can be prepared as a meal or as a fabulous appetizer for your next dinner party. Ceviche can be quite beautiful on a serving platter. Line a large glass dish or individual serving cup (a wide mouthed martini glass makes an excellent impression) with a few lettuce leaves. Spoon in the ceviche and then garnish with one or more colorful ingredient such as thin rings of red onion, one-quarter of an avocado sliced and fanned, assorted bell peppers finely diced. The possibilities are endless.
The chemical process that occurs when the acid of the citrus comes in contact with the fish is similar what happens when the fish is cooked, and the flesh becomes opaque and firm. Indeed, many people refer to the juice as "cooking" the fish, although that is just plain wrong!
