Update:  Thanks yall for the tips and advice.  I chickened out on the grill.  Bad I know but I was really nervous about cooking these things to begin with and I've had horrible cramps all day so I just broiled them.  I put a little EVOO on each side and sprinkled with the Montreal Steak Seasoning Mix (Garlic, Pepper, some other stuff) and then put them in for 10 minutes and let them go.  I did forget about the windows and both my alarms went off but bf climbed up and took them down for me.  I'll remember next time.

I'm starting to freak out over the cooking of steak for tomorrow night.  BF's birthday is tomorrow night and since we are having hell month at work right now I offered to make him a special dinner.  Well he picked steak.  I have no clue how to cook this stuff.  I haven't eaten cow in almost 2 years let alone cook the stuff.  So can anyone help me out?


I have access to my stove, oven, and a tiny george foreman grill but I think that's out because these things are about an inch thick with a bone in them.  I also have a meat therometer which I will probably rely on as I want these things well done (I have this whole mad cow disease fear - stupid yes I know but oh well).  I hear charcoal grill is the way to go but I don't have access to that at my apt. I have propane but I think I need to cook these things fairly quickly as I think we will both be getting home around 9 or 10

So you do have access to a gas grill?  If so, that's what you should use IMO.  It won't take long on the grill at all.  Just take them out of the freezer before you  leave for work that morning and by the time you come home they'll be thawed.  Then just preheat your grill for 5-10 mins and throw them on.  We have a meat therometer too and it works like a charm.  I can tell you on our gas grill, we cook steaks 7 mins a side for Medium.  If you want them well done, I'm going to say about 9-10 mins a side.

Thanks Shopchicago.  I have access to the gas grill by the pool area which isn't too far away.  I guess I was just concerned in case I end up getting home late tomorrow night with what to do.  We just got the usual be cautious letter on all our doors because people were stupid and left valuables out in the open in their cars so I don't want to be out too late at night.

If you get home late and have to use your oven, preheat the broiler, rub the steak with cracked black pepper, or fresh ground pepper, if you don't have it though, don't freak. But do NOT put salt on it until after its cooked (it tightens the meat). Place the steaks on a cookie sheet, top each with a pat of butter, and place under the broiler until it's done to your liking, turning once. You can tell how done it is without cutting it by poking at it with a butter knife (don't cut into it) if it squishes easily, it's rare, then the harder it gets, the more it's cooked. Does that make sense? It shoudl take about 10 minutes total, but cooking times always vary, so just kind of keep an eye on it. Oh, and obviously, you want to have everythign else that you're eating done BEFORE you start the steaks.

please do not, for the love of god, cook your steak well done. It will taste as tough as an old boot and ruin your steak experience. A perfect steak should be no more than medium, still pink in the middle. Use the propane if you can. Preheat the grill for about 10 minutes until nice and hot. Season your steaks (I always use Hy's Seasoning) and put them on the grill 5 to 7 mins each side. Do not keep flipping them over and over: do one side 5 min, the other side 5 min or so.


And for the record, there is pretty much zero chance of mad cow disease getting into commercial food. And cooking beef to well would not rid it of the mad cow virus. Trust me - I am a chef.

Thanks Dizzy and Metric.  I will try to figure out medium-well as I don't want to eat a boot tonight.


Metric - I know there is probably a zero chance with mad cow but i think i just use it as an excuse to get out of eating beef as I prefer turkey and chicken.  I probably should quit with the whole mad cow thing as no one has died recently of it.

One other thing I would suggest: let the steaks "rest" for a bit after you're done cooking so the juices settle. If you cut into them right away after cooking, more juices will come out and this makes the steaks more dry.

If you do end up having to cook them inside your apartment, be sure you have some windows open and maybe even your door a little to create cross-ventilation. Sometimes when I use my broiler it sets off the smoke alarm.
