What do guys serve when you are making a "fancy" dinner? I was just curious because none of the recipes I make seem very special occasion and I need some ideas!!

I don't know the rules about "fancy" dinners, but I recently prepared a pork tenderloin and I think it looks really pretty presented on a plate.

We bought the pork tenderloin at the grocery store already prepared in a peppercorn merinade.  Then I added olive oil, garlic salt, and rosemary to it.  I pan seared it in a skillet just long enough to brown each side, then put it in the oven and baked it until done (about 30 minutes).

When it is done you can either present the entire tenderloin on a platter or slice it up and place the individual slices on each plate.

I like to serve it with red potatoes halved and mixed up with olive oil and rosemary baked on a cookie sheet.  I also usually also serve it with asparagus.  It looks pretty anyway and takes great!  Everyone always raves about it.

i like to make a pancetta-wrapped pork roast from an old martha stewart magazine.  you wrap the roast up in pancetta slices, then tie the whole thing up with kitchen twine and stuff some rosemary sprigs in it, then roast in the oven--it looks like a little present when you put it on the table.  i am sure you can find the recipe online--martha's website is really good.

For Christmas dinner we had shrimp reumolode (sp?) appetizer, beef tenderloin, some wonderful cauliflower, whole green beans & a salad with cranberries & walnuts - i got the recipe for all of that (except the salad) if you'd like me to share. It seemed "fancy".
